hello ,it is quite confusing to me, for the lychee syrup, you add 80g into it, normally we add 6 times (30g) amount for dissolving the gelatin powder, then there are 50g syrup left to add into chopped lychee, is it right? thanx a lot
conceptually impecable. amazing combination. if u dont mind, here some advices: 1- use a piping bag to spread the mousse. it will look more plain and u earn precision. 2- its a good idea to let each layer of mousse freeze before adding a new one, or the phases wont look plain

They are sold in shops for confectioners/online shops, Amazon, e.g. Ring molds can be replaced by silicone molds, those that are similar to large molds for muffins. In these case assemble cake upside down (sponge layer will be on top) and freeze for several hours to take it out later. Some cooks don’t use acetate rolls and remove rings with the help of gas jet)
