How to make yogurt in the Instant Pot (greek yogurt or regular yogurt)

  • Making yogurt in the Instant Pot is not hard at all! It takes some time (mostly all hands off time) but it's easy. Once you get started making yogurt at home you'll get hooked at never buy it at the store again. In this how-to Instant Pot video tutorial I show you how to make Instant Pot greek yogurt. You can also make just regular yogurt if you don't like it thick. I like to use 2% milk or whole milk for the best flavor and texture. But you can also use skim milk or 1% milk.

    If you leave the yogurt in the cheese cloth for two days, and add a sprinkle of salt, you have homemade cream cheese. I make that and add herbs from out of the garden and it tastes like Boursin Cheese. I also make cheese cakes out of the cream cheese. Takes a little more effort, but it makes the most fantastic cheese cake and costs much less than four boxes of Philly cream cheese.

    After looking at many instant pot yogurt recipes I decided to try yours. Turned out fantastic! We’ve also used it as a sour cream replacement. I had it in the instant pot for 8 hours, not tart at all. A friend did 9 hours and there was a little bit of tart. I may try 10 hours next time. I also want to make cream cheese that can be flavored. I feel so accomplished!

    I just made yogurt for the first time, and oh my god is it so much better than store bought. I used your method. For topping I made instant pot apple butter a week ago and decided to try it and BAM! New favorite yogurt flavor. It was like eating autumn. Also tried herseys strawberry syrup and my partner just ate a second bowl. Thank you thank you thank you!

    I've been thinking about making yogurt, but thought it was too hard. I was WRONG! Thank you, thank you for this vid. I eat plain greek yogurt everyday. This will save me a ton of $$ and I'll know exact what is in it! Now I just need to run out and get an Instant Pot. :)

    The biggest reason to heat milk to almost boiling before fermenting is that it improves the texture of the yogurt. During fermentation the bacteria consume lactose and produce lactic acid which causes the milk proteins to denature and coagulate trapping most of the fat. My grandmother died at age 101 in her sleep. My dad age 97 in hospital in his sleep, my mother is now going to be 101 April 4 she and I have a really bad sweet tooth lol. My aunt just passed at age 95 the typical 1950's cocktail and husband smoked type he died around age 87. Life is short but there are factors involved besides diet. We are Greeks eating little processed foods. I have 8 children five sons. They like to cook the daughters do not as much the sons enjoy the process of cooking the daughters are adopted two from Russia one from USA Georgia she likes to cook a little bit but the sons really enjoy it.
    So it is a study within a family to see who smokes who eats healthier etc. My grandparents on my father's side lived long lives too.
    So many factors science does not know yet about living healthy so I ignore many things: what I do pay attention to: I do not eat processed foods period. I do not smoke I drink a glass of wine once or twice a years I do not like alcohol.
    I eat tons of yogurts and milk products. Our milk products are pastuerized.

      Hi Row, if I try to make greek yogurt using lactose-free milk and lactose-free yogurt as a starter, this will not work?

      @@priscilaveloso1873 hi you must have the appropriate bacteria and not ultra pasteurized I use reg milk whole. My starter is another whole milk. You presented an interesting problem that needs research

    Love your approach and of course your manner. You always seem to have so much fun. Nothing wrong with getting a new ring, but why not just cover it with a lid or plate for you are not pressure cooking so an air tight seal is not necessary. Keep on cooking and thanks.

    I made this today and it was super easy. I followed your instructions using the yogurt setting on my IP but I also added a can of sweetened condensed milk to sweeten it up a little. Turned out great! Thanks!

      I added mine right before leaving it for 8 hours in pot but after the cool down and it taste great. I used half a can as I only used half a gallon of milk.

      I added it once the milk was cooled down to 110 degrees. Then did the 8 hour process.

    Natren sells yogurt starter powder. The powder lasts several months in the fridge so it's good to have on hand in case you don't have yogurt on hand for starter.

    Just wanted to say at high altitude my temp of milk goes to 170 to 175. Boiling point is lower at high altitude. I also want to mention I found an 8 qt. instant pot at Good Will works fine for yogurt even though it doesnt do pressure cook very well at all. I have a 6qt that I love so I bought the 8qt.for yogurt. By complete accident by hitting a wrong button I realized it has a 25 hour cook time if you set it to low or med. It is much better yogurt as far as good bacteria and lowering the glucose. Turned out awesome. I take it out as soon as the boil beeps and cool down to 116 or 117. Cooks on low for 25 hours. I put the whole thing in fridge overnight kept in instant pot with the lid. Awesome!!

    We pour in gallon of milk, add about 1/2 cup of previously mad yogurt, set the pot on yogurt setting for 12 hours. Presto! Great yogurt.

    Great instant pot yogurt recipe! In my experience the whey is less if the milk is cooled down to room temperature after boiling.

    OMGOMG thank you so much my first attempt trying to make yogurt and my Insta pot was last week and I did not know you had to adjust it to boil and then wait until it cools off to add the starter kit I just put it on nine hours and mix the starter all together and it turns out like crap after watching this video I made the perfect consistency of yogurt Economical I will never go back to storr my yogurt I already made homemade jam to mix with it it is perfect and much more healthier

    Don’t get rid of the whey! It makes a great egg replacement but my favorite thing to do is to dehydrate it and then powder it for an unflavored whey protein powder. It’s amazing and way less expensive than anything you’ll find at the store.

      You use the same amount as if you were using plain yogurt as your starter. For example: 1 Tbs. for 1 quart, 2 Tbs. for 2 quarts and so on. Hope this helps.

    I've found that if you cool it by taking the pan out, but not in a water bath, the yogurt comes out more thick.

      My ip doesn’t have an adjust button ....took me quite awhile too figure how to get the boil setting to come on by pressing the yoghurt button twice

      Thanks for that Tip. I make the cold start yogurt and today I am trying this method. My pot doesn’t have an adjust button so my milk is on the stove now. I was scrolling through the comments when I found yours. Tried pushing the yogurt button twice and it worked! Yeah!

    Have tried this twice in my 3 quart. The 1st batch was regular 2% milk and it was maybe slightly thicken. The 2nd batch was organic whole milk and work a little better. I know it's not the starter because I bought a new carton and I tempered before adding. I read through the comments and noticed one where the reply stated organic milk is usually ultra-pasteurized and sure enough mine was. I may give this a 3rd try and use my 6 quart with some other kind of milk. The organic milk was 5 bucks so I'm hoping non-organic is cheaper. If the 3rd try doesn't work I may just keep buying the store stuff.

    That was very interesting. I LOVE Greek yogurt but you made a couple of weeks worth, maybe a bit less, for my consumption so when I do this (I have a Greek Yogurt Culture) I will make a Litre.
    Just one thing, you did not mention sterilisation things. Did you do anything spectacular in that area. I have sterilising material that I use for Homebrew Beer which I was going to use. What are your thoughts?

    Great video really clear. I live in a place where water is a precious resource (ie planet earth) so I would rather let it cool naturally than wasting the water to cool it quicker.

    Ive been making yogart for years with my instant pot if you use fair life milk you dont have to heat it up at all pour it in add your plain yogart and push yogart button eight hours latter you got great yogart.

    Here in my area area of California, milk is 3 bucks plus. A quart of yogurt is expensive.

    Thank you for sharing! question for you. At the 9:55 mark, you mention you can use 2 tbsp of this yogurt for your next starter. I love that idea! How many times can pull tbsp from each new batch before you have to go buy more yogurt from the store? For example, after 5 batches have come and gone, do you have to get a new source or can you keep on using 2 tbsp from your most recent batch? I hope that makes sense, it's hard to get the question right when you are writing the question.

    Oh man, I have seen this a few times and made it twice and wondered why it wasn't as thick as yours. I missed the step of chilling it before straining it. Batch 2 is in the fridge now and I was reviewing the steps to see what I missed. Not sure if I should keep straining or not. Last batch tasted good but the consistency wasn't Greek yogurt. I hate to give up

      Yogurt has to be cold before straining. I use a paper towel over the strainer to strain in the fridge. 8+ hours of straining is good. The Whey can be used in place of Buttermilk (Buttermilk Biscuits 😋).

    The temp should be between 170 and 180 degrees then cool to between 100 and 110 degrees. Anything lower the starter won't take, anything over could kill it.

    I'm loving this, bought my first Instant Pot and it just arrived and cannot wait to make yogurt. Process seems similar to making beer which my doctor said I can't have no more so I will now make Yogurt instead. Take that DOCTOR lol
    I'm wondering if you can use "expired milk" to make yogurt" and can you extend the usability/edibility of expired milk by turning it into yogurt?

    I made the mistake of putting the valve at venting while the milk was coming up to temperature. Started spitting all over the place. I turned it off, cleaned up the mess and let it cool to 115 degrees. Added starter and let it go. Now, I realized I never checked to see if the temperature was 180 before I let it cool down. Will the completed yogurt be safe to eat…that’s even if it thickens! Thank you!

    I have the smaller instant pot. When I got to step 2 and selected yogurt, it automatically went to boil again. I did not select that, and the next three choices after I set the time to 8 hours was low, medium, custom. When I selected low, it showed around 80 degrees (can't remember exactly), when I selected high, it chose 181, and there was a custom setting where I guess you set the temp. So for Step 2, do I select the Low setting?

    Thank you for the recipe - hope to try it soon. Have you tried adding vanilla or honey to your yogurt during the cooking process? Wonder if it works the same or anything needs to be changed in the cooking process

      I add vanilla and honey after the yogurt is done--at the point I'm ready to eat it. At the price of vanilla these days, you definitely don't want to be straining it out of your yogurt. Raw local honey, which is most nutritious, can also be pricey.

      Besides the issue of waste (losing some of it in the whey) that Artbarn mentions, vanilla is an alcohol and heat volatizes it, evaporating some of it off. I'd worry about losing flavor that way. All recipes for the use of vanilla in cooked products (puddings, fillings) suggest adding it after the application of heat is over if that's possible (obviously not possible in cakes or other baked goods) and I'm guessing that's the reason.

    What's the benefit of doing the boiling method versus the cold start method? Does it just have to do with the kind of milk you use?

      I believe it boils whatever bacteria that's in the milk out. If you use the fairlife milk you don't have to boil first.

      Romanaudrey Roman I had the same problem even incubating at 9 hours. It came out runny and no tartness. I went to a yogurt in Instant Pot forum and learned that the setting while incubating should always be on Normal. I will try it again with that setting.

    After watching this I went looking for an 8 or 10 qt Instant Pot but none had the Adjust button. Any ideas?

      lertyuis...Mine doesn't have the adjust button so what I do instead is press the yogurt button an extra time or two and it takes me to what I'm looking for. Hope this helps.

      If you push the yogurt button again it adjusts to boil ;)

    The only thing I don't like about Instant Pot making yogurt is that you can't adjust the 110 degrees it incubates at. Some probiotics prefer a slightly lower temperature and may die at 110 degrees. Dedicated yogurt makers sometimes give you a choice of temperatures to incubate at.

    First time I made it, it was great! Second time failure. After 10 hours it is just milk. Followed directions. It is in fridge cooling. Can I safely add more plain yogurt and just start again on yogurt setting?

    Thank you for this video. I have a couple of questions. Do I put it in vent or seal for heati g up the milk during the first stage and can I freeze the whey to use as a starter later on...if so, do I use the same quantity as I would using the yogurt for the starter? Thanks in advance!
