Freshly harvested potatoes are a LOT better than anything you can buy in a store!
Nice harvest! I cure mine in the airy, dark, warm, dry barn. When it gets cold I cellar them or shred, blanch and dehydrate for instant potatoes if it looks like they won't keep long.
👋👍 Consider yourself extremely lucky to even have a crop yield. Others aren't so fortunate due to weather.

What can you plant in that hot bed next year ?
Little over grown but I have found that if you can get it wood mulch or even hay to cover the weeds makes a big difference and the tubbers grow in the loose mulch making easy havest enjoy your dinner
I have the same problem. Seems like theres no weeds then all of a sudden they're taller than the potato plants. No other beds ever get that way.
Ones not buried all the way will be green on top.dont eat those they will give you a stomach ache. We harvest in aprilish early may in Tally.

My Grandparents had three different garden spots where they would rotate potatoes. Remember helping them plant numerous times. Only troubling thing they did was they always grew fellow nightshades in the same areas.
The 'old folks' had a few peculiar ways about them...
