I LOVEed the debone of thigh and drummy,,as for leaving meat on the bone,,I just freeze them and when I have enuff I make chicken stock

It was a shoulder bone, the wish bone was not touched. take care not to lose the oyster from the leg. Generally you left some meat on the bones. Good try though.
