What can you use instead of eggs to make them VG? Love Gnocchi, definitely gonna try 🤩

Try a dash of plant based milk instead. Just add a tiny bit, as you would only be using one egg yolk which isn't much.

Also would potato starch work as a flour?

Just made this - delicious, although have to admit I skipped the rolling out and just spooned a gnocchi shaped dollop into the boiling water - it worked fine.

This looks gorgeous! Would millet flour work in these, do you think? And aquafaba instead of egg yolk? (Though I understand aquafaba is usually a substitute for egg white...)
    Hope you can help.

If you want to avoid egg, just try leaving it out. It will still work without. If you need extra moisture, just add a tiny dash of milk or plant milk.
And we've not tried millet flour, but you should be able to play around with most flours.

Daft question time - how would I store them in the fridge?

Such a bummer! Every gnocchi recipe I've seen has wheat, eggs, and or dairy😭

You can try a little plant based milk in place of the eggs. Should work as well!
