Time Team S14-E06 A Port and Stilton, Stilton, Cambridgeshire

  • In late March 2006, a potter and keen fieldwalker, Richard Landy, reported his discovery of an almost complete ceramic Roman cheese press, used for making goat's cheese, to his local finds liaison officer (FLO) under the Portable Antiquities Scheme. What made it all the more special is where he found it - washing out of the side of a two-metre-deep ditch in Stilton, Cambridgeshire.
    This cheese press is just one of hundreds of finds Richard has discovered from the area around the ditch. These include Samian ware, mica dusted ware, Nene valley ware, local Roman coarse wares, medieval green glazed pottery and other objects, including Neolithic polished axes, animal remains and Roman pottery-making tools. Coins have also been discovered by limited metal detecting.
    Time Team had the usual three days to dig through the two metres of silt that has been deposited on top of the Roman layer over the past two millennia, to investigate the site and work out how it connected to the rest of the Roman Fens. And of course they couldn't resist trying their hand at making some Roman cheese as well.

    Perhaps Phil's smaller kiln was used for special pieces of pottery, maybe commissioned pieces for wealthy people from miles away.
    - I really admire the digger drivers... they do such a fantastic job of removing shallow layers of dirt, harming as little as possible as they do. To me, they are the 'unsung heroes' of the dig.

    I've often wished that they had made a 'behind the scenes/making of' video showing how they plan, organize, script, direct, film & edit an episode. I think this might have been an interesting one to see, especially the scripting.

    I like Time Team. I used to watch it in the 1990s at my mother in law's house when I visited Peter who is now my hubby.
    21 is the age we acquire wisdom teeth.
    Metres come from the French Revolution. Meters and inches are mentioned in one sentence! Are we the only age to use 2 different systems of measurement at once? Mad! Just imagine if the cathedrals and monasteries were built by a mix of inches and centimetres!!!! I prefer to use Imperial. Good Imperial. Based on nature. The guys who invented meters centimetres had their head chopped off, I think. So did M Guillotine.
    Most Time Team is based in the south of England. In Yorkshire, we didn't get many Time Team visits. I would like them to have come to Fountains Abbey.

    To visually appreciate stilton cheese, I recommend watching the programme 'Chef!' starring Lenny Henry. Look for the episode in which Chef buys black market, unpasteurized stilton cheese to feed to a famous French chef visiting Le Châteaux Anglais. First, prepare to laugh yourself to tears!

    The reason I never became vegan was that I refused to give up Stilton. Finest cheese in the history of cheese. Even finer is one made from unpastuerised milk, called Stichelton.

    I've wanted to try a ripe stilton ever since reading an old horror story ages ago by the same name. I found it on Amazon but I guess it's a little out of my league as they wanted like $40.00 for a few ounces of the stuff. Guess I'll stick with seriously sharp cabot cheddar, lol

      Save up and get some. Proper stilton is so worth it. I buy myself a pot from a specialist cheese shop at Christmas and eat it with crackers at night when my husband is sleeping so I don't have to share 😂😂😂

      I'm not meaning to sound sexist, but she is hot! (One would have to be blind not to see it.) This is meant more as a compliment. I love her smile. There is an element of mischief there that to me is very alluring. I am secure in saying this all the while respecting her as a very accomplished Woman. Kudos to her!

    What's the difference between Stilton cheese from what's classically called ' blue cheese ' ?

      Stilton is A blue cheese*, but there are others. The actual "Stilton" label, however, is a PDO.
      For those who are not from the U.K. or Europe: a Protected Designation of Origin (PDO) is the name of an area, a specific place or, in exceptional cases, the name of a country, used as a designation for an agricultural product or a foodstuff.
      It's like a patent on calling your product by a recognized name. Examples: By European laws, sparkling wine cannot be called Champagne unless it actually comes from the Champagne region of France, and a Melton Mowbray pork pie must come from the area around Melton Mowbray. To carry the name Roquefort on a cheese, it must be made with a specific breed of sheep's milk, in a prescribed manner, and aged in specific caves in a specific region of France. (There are a lot of PDO-type restrictions on cheeses.)
      The idea of 'trademarking' this kind of name has since spread to other parts of the world. The Chinese have a similar designation for certain sauces, Mexico protects their vanilla bean and extract products, and in the U.S. the name Vidalia onion has a geographical restriction as well.
      There are two or three fungi which are used in blue cheese making. Stilton actually has the same fungus in it which makes Roquefort cheese blue, however Roquefort is sheep's milk and Stilton comes from cows.
      The ironic thing is, that the town of Stilton itself isn't in the geographical designation for "Stilton Cheese"...so a "Stilton" made IN Stilton...couldn't be sold as a "Stilton".
      *Stilton also comes in a white variety, without the Penicillium roqueforti fungus added in.

      +Stannous Flouride He never made it to West, TN, lol. Even the paved roads there are reddish tinted. I've even seens areas in Washington County, Indiana with red clay....I wonder if that occurred when John Hunt Morgan rode through, LOL.

    I really like TT but they jump to conclusions with very little or no evidence in nearly every episode. Thats the problem when you have only three days and a tight production schedule.

      Tony does sometimes leap from an archaeologist's theory to "We've confirmed we have a ..." but the archaeologists are expert at reading the evidence they find and cross referencing it with other more conclusive digs. A more comprehensive dig would never make it on to tv because 95% of it would be mind numbingly boring.

      Actually it's exactly the opposite. Sex is biological, gender has to do with how a person presents themselves. You can determine sex from the skeleton itself, but not gender.
