If you want to get VERY big chunks of hair when you're taking it out, use hemostats. They're what doctors use to stop blood from moving in a vein and they have small indents near the handle which click together, which means they will hold BIG chunks of hair by the glue, without letting them go. It took me 2 hours to de-hair a pony with tweezers and 10-15 minutes to de-hair it the hemostats. My father says that they aren't too expensive, so I recommend anyone reading this who reroots pony hair to get some hemostats.
I would've used a princess celestia doll since it has the right figure, plus, you'll have a much easier time with the neck plug and pulling out the hair that way. But it doesnt mean this is a bad custom at all. I do like with the colors you used.

This is another option that can also work, you can get a unicorn and a Pegasus and pop off their heads and switch the unicorn body with the Pegasus body, glue them together and paint while also being able to make a earth pony with the remaining head an body, or you can buy a princess Twilight pony.Hope this helped! :>
