I just made this and WOW!!! The flavor is absolutely phenomenal. I used a combo of chipotle and smoked pepper along with some cayenne for heat. Absolutely out of this world. I would love to learn of more of your recipes for Mexican seasoning for chicken, pork, beef, and fish. This one is staying in my recipe repertoire for life!
Cut off all the fat before you start. Use a pie plate or round cake pan. Weber makes a great non-stick beer can chicken pan. Even comes with a cast iron neck plug so the moisture doesn’t escape.
Sam, Do you recommend any drink substitution to Beer? I know you added Lime juice to the rub to make a mix and wonder whether I could also add a bit of oil to get the skin more crispier and add minced garlic to rub as I love Garlic on chicken :)
clarified butter/olive oil work just fine. as for a drink substitute. you can use a can of chicken broth, but its just not the same as a good ol can of beer. i throw some lemon/rosemary into the beer can, with some garlic on the top hole of the chicken.

First time I see this trick with the can. seems a bit stupid. the beer doesn't really add anything to the taste. it's the spices, and I wouldn't really want a metal object with paint on it to touch my food for 90 minutes at a high temp

you also need to put olive oil on the chicken before you add the spice paste
