Chicha de Pina con Arroz - a Drink to Make with your Pineapple Scraps

    This recipe is certainly unique recipe from Colombia made with the peel of a pineapple. At first I was certainly skeptical, but the drink turned out awesome.
    First off we need 1 pineapple shell. (Shell, Peel? I have no idea what this thing is called). So the actual pineapple we can use for another recipe, but here,the part I have normally been throwing away is actually what we are after.
    We will take this and cut it into smaller pieces, this just helps with the next step, which is to boil it. Just get a pot going with 4L of water, and place our pieces in. We want this pineapple to boil for 30 minutes to completely soften up.
    In a seperate pan we want to boil some spices in water. We only need about 500 mL of water, but here the spice mixture is up to you. I am adding 1 cinnamon stick, 1 star anise (totally optional) and 4-8 cloves. Set this on medium and let it go for a few minutes.
    While we are waiting for the spices to infuse with the water, and the pineapple to soften we can measure out our last two ingredients. 1. We need some rice, around 180 grams of it to be specific. And lastly we need 120 grams of sugar sugar.
    When the pineapple has been boiling for 20 of it's requisite 30 minutes, we can add the rice and sugar. This is also a good point to strain the spice water and add it to the pineapple as well.
    We will let everything continue to boil for 10 minutes, at which point the rice should be soft. If your rice isn't soft just keep boiling until it is.
    Now we are on the home stretch. Pull out your blender or food processor and blend everything together. Once it is smooth, we can strain it to catch all of the pulp. Cool the strained juice completely, and we are done!.
    This drink tastes great, it's amazing it has a thick tastes a little like juice quality.
    Ingredients:
    1 pineapple shell
    180 grams of rice
    120 grams of sugar (preferably an unrefined kind)
    2 cinnamon sticks
    6-8 cloves

    I've seen cultures across south America and the Caribbean make this drink but I have never seen anyone put rice in it

    I got a tip. Don't boil . leave it in a pot for one week. Enjoy
