Sturdy makes it so a Pokemon survives with 1 HP if it was at full health and going to be KO'd. It's not a chance based thing. That's why it kept activating, because it was back to full HP after the full restores
Sturdy protects against 1-hit KOs and is guaranteed unless something's disabling it. So anytime the Pokemon is at full health and would be taken out in one hit, it will always activate. It's not a once-per-battle ability and will also never activate when the Pokemon's HP is less than 100%.
