In the case of the C8, because there is such a wide variety of ranges there is also a corresponding range of accuracies. Safest bet is always to look at the manufacturer's [technical] documentation. However, stamped on the data plate is, in fact, the words, "Accuracy +/- 5% of Applied Load" :)
Is it safe to estimate the OEM's accuracy is +/- 5%?

Not the instrument that is demonstrated. The maximum cable size this particular model can accurately measure is 1/4", (6.35mm).
