    I just threw the cheese in a pot the sodium citrate and it works perfectly. It's a pretty hard recipe to screw up which s nice. I'm glad someone's getting this out there it's one of my favorite things I've learned.

    After watching an hour of sodium citrate Mac & cheese videos ~ yours is the recipe I made. Very yummy and super easy. If you would give measurements instead of weights, that would have eased my mind. I made the cheese sauce in a ceramic frypan with a silicone whisk - super easy & no big deal. Thanks again for giving me the recipe I’ll be using again & again. God bless💝

    Won’t the citrate dissolve in the water? Why blend?

      For the cheese really, you can whisk the citrate

    Hello just tried the recipe with fat free cheese and i did it with 100 grams of water and 100 grams of fat free cheese and i used 2 grams of the sodium citrate and didn't work the it looked like i used to much water don't know if used the wrong measurements can you give me some advise

    clearly hella behind on this but I'm curious- do you think this would work with coconut or olive oil and spices/noosh for someone (like me) who's allergic to dairy? I know it's not cheese but if it's just emulsified fat+water+flavor seems like it might work, but I don't know if the protein component of the cheese is actually important.

      alfredo sauce is a bit different, depends on how youd make it though. i have one coming soon

    Dumb question. Would you know if lemon salt is similar to sodium citrate? They like to have 20 different names for things in dubai due to the battle between British, Arab, American and Asian represetation

    It isn't just that people don't want to take the time to make a bechamel sauce, it's mostly because of the HUGE addition of wasted calories (within the anabolic community)! You simply can not remain in a low calorie deficit whilst also indulging in calorie dense sauces/condiments. If this will work with fat free cheese and the sodium citrate is a calorie free ingredient, I am all ears!! 😁

    If fat free cheese doesn't taste like anything to you, you may indulge too frequently in heavily calorie dense foods; no wonder people consider anything not loaded with unnecessary calories "diet food".

      So true man I can’t believe Gordon Ramsey doesn’t use fat free cheese in his dishes. All jokes aside I’ve been deep into a deficit before and fat free cheese still tasted like eraser shavings lol. I agree with mina that it should be used in dishes where cheese is not the main ingredient

      def works with fat free if that's what you choose to do, the container i showed is only fat free cheese. it's not bad but not good
