  • Welcome to TRW Pizza, my channel dedicated to home pizza making. I am passionate about Italian food and have spent 15 to 20 years developing my skills in this area although pizza making has come relatively recently as a passion for me.
I always thought that making home made pizza is never going to be good enough because you don’t have the temperature required in a home over, however with good quality pizza stones and the introduction of incredible home pizza ovens such as the Ooni Koda my belief has been completely changed.
Now I am completely obsessed with pizza making and constantly strive to evolve and improve my process. I talk about dough making technique, ingredients selection, cooking methods, pizza stones, temperatures, fermentation process, cheese selection and toppings application as well as the variety of pizza making products available on the market.
I hope you find this a useful resource.
    Many thanks, TRW

Hello, I was just gifted a Koda 16 for Christmas. Your channel is fabulous and I plan to learn from your journey. I’m curious as to what dough mixer you use for your doughs. Thanks again.
      Al from California.

@@jazzlegend Al, many thanks for your kind words, I’m delighted you find my videos useful. I honestly make all my dough by hand for the full process. I do have a Kenwood kitchen machine which has a dough mixer module and it’s fantastic but I don’t use it for my pizzas generally. I truly believe there isn’t a lot of kneading and hand work required for making good pizza dough. If you see my full dough recipe videos you will see it’s only a couple of minutes for both phases where you work the dough, so I think a dough mixer is overkill unless you are making lots of pizza. I hope that makes sense and helps :)

Subscribed and interested in the journey. I too have just purchased a Koda 16. I feel my addiction taking hold.

Great to hear Michael. It’s a great journey, loads to learn through trial and error, loads of mistakes that will be made but also loads of great pizza to be eaten along the way. It’s a very satisfying pass time. You will develop a close relationship with that over Sir I have no doubt :)
