    hi chef am 20 y.o and livin in Istanbul/Turkey. R2now am workin at the Nobu İstanbul at the sushi bar.But issue is am only makin preperation (btw i was started 18 yo now will be a maybe 2 year or more in sushi bar exp.)And also they want from me if he showed to me some2ing he doesn't want any mistake thats a really nerveusin to me so how can i be a perfect idk.What shld i do and also at the same time we have a Sous Chef from the nobu schroditch i was askin this guy why u are here he sayin for local chef teaching nobu standarts but he doesnt answer to me about how can i about improve my self. if i ask him some2ing he is repeating my voice and make merry over u know. Nobu is a big company and also a lot of oportinities for a life but point is what shld i do for improving 2 my self thats it

      You must practice and make perfect. It took me 5+ years until I ran my first bar. The head chef at Morimoto told me, first 10 years are for practicing. If you want everything to be perfect, you have to know every aspect of your position and master it. When you have time to prep other things, learn. Learn as much as you can. 2 years is a small time for sushi chef so you have much to learn! Don’t give up and don’t complain. Just do what they need you to do. Practice knife skills and find other ways to become faster and more efficient. More importantly be consistent. Give it 110%! Let me know if you need any more advice or help!
