      We could say it's subjective. It depends on personal preferences and how you want your lavash to turn out. Our suggestion is to experiment with different types of flour. Start with the type 1 flour used in the video and see if you like the result.
      When trying to replicate recipes passed down through generations, besides the ingredients, many other factors come into play, such as the cooking method. How many people have a wood-fired oven like the one in the documentary at home? The challenge lies not so much in achieving the exact same product, which is impossible, but in trying to incorporate as many components as possible that resemble the traditional recipe.
      Remember, cooking is all about experimentation. You just have to experiment and trust your instincts, just as the elders who pass down their knowledge from generation to generation do, so that it continues to live beyond their lives.
