The inclusion of Co-Op and the fandom being dumbasses is perfect- if you are thinking of making a part 3, more co-op like boss-fights could be fun or maybe more of different VA’s interacting. My personal theory of Paimon's origins is that she is the creation of the Sustainer, or the Unknown God. She had defeated the traveler before, and to make sure the traveler never discover the truth, Paimon was created to keep an eye on the traveler. But, Paimon betrayed the Sustainer by actually being a good companion. That is why she has the same symbol that keeps appearing when in the context of Celestia. That symbol always appear in places of divinity, such as the Temples of the Four Winds. But, there is one slight difference between the symbol on Paimon's chest and that of the temples'. It's upside down. Paimon has an upside down symbol of Celestia. This is why I believe Paimon is the creation of the Sustainer or atleast came from Celestia and betrayed Celestia by helping the traveler. But it is a possibility that Paimon is just acting.
