I love Gaz, he’s such a nice person, and a great chef too. I think at some stage he would like to open a health retreat on his property in Wales. I have made quite a few of his recipes, and yes you do need to adjust slightly because of the oil. Everything he does has great flavour. Thank you for the great adaptations.
Well, you are in good company with your "pasta" pronunciation - Derek from Simnett Nutrition and some other Canadien TH-camrs I watch pronounce it the same way, not wrong, different country/accent. Am also a big Gaz fan, some of his stuff, kind of like Nisha, is what I would call "adult" style food, and sometimes takes a while to put together, but the flavors are amazing. Derek Sarno is another wonderful vegan chef, mostly whole foods and gives oil-free tips while cooking. He has been in the UK for a while, but is coming back to the US. He does amazing stuff with mushrooms and his cooking companion is a really cute lab named Frankie.

Thanks so much fam this was fun as always…sitting here with the sniffles and this real cheered me up. Hate the foggy glasses I get too when boiling or opening the oven 😵💫
When are you going to make Derek Sarno's Lion's Mane steaks ?! I made some and they were amazing !!! It does take some time but the result is totally worth it. I posted a picture on the mighty network. And yes, Gaz is absolutely gorgeous and his place is paradise !!!
This is great. I love Gaz. His journey has been fun to follow. One thought…in the lasagna I would have minced the mushrooms and stirred the lentils in whole. The mush you created prob made it softer and like a soup.

I could be wrong, but I am guessing veg mince 'meat' is similar to vegan beef crumbles. Wine adds extra flavor. The alcohol cooks off, but it isn't a necessary ingredient. I am sure it will taste great without the wine or the extra oil.

The lasagna looks scrumptious, but I think waiting til the next day might be a good idea so it can be cut in squares and stay together. The cauliflower salad also looks delicious and I would like to try it. The pasta dish looks good, but I am not a fan of lemon in savory dishes, so I would pass on trying that one. I will have to check out Gaz's videos. It looks like a "feel-good" channel, like yours, Jeremy. Thanks for introducing him.
Mine too. best lasagna recipe on the internet. no lame tofuricotta or cashewcream. Bechamel is the way! Made it thousand times, everybody loved it so far. Only these 3 people in the video ate it with disgust I ever seen.

Have you tried the PlantYou cauli wings? I haven’t but she wraps them in rice paper then broils them for crispiness. 😋 Also, my family enjoyed several recipes (especially the bean burgers) in The Healthspan Solution if you haven’t done that one yet.
2 tins of tomatoes will mean small ones as we dont have big ones in the UK. I think his lasagna has cheese on top which is why it looks yellow. I would like to try the cauliflower ❤Amazing the kiddies loved the salad with no dressing.
I was surprised with your take on the fried cauliflower. I use aquafaba to coat the cauliflower and then dredge it in cornflour. I think I got the idea from you a while back.
All the recipes looked tasty. I also have trouble getting cauliflower wings crispy enough. I actually like the way you pronounce things. I like listening to people talk that are not from the Texas Panhandle.
Dude! You are Canadian and its a different dialect just like here in the US; different areas speak differently. Say pasta as you say pasta. It doesn’t make you wrong by any means. Good lord people, its a big world out there, not everyone pronounces words like you do - thank goodness.
I wonder if you would do better trying whole food plant-based cooks like "the whole food plant based cooking show" or "well your world"...honestly, I find it is a better move to go directly to folks who are already cooking that way rather than change the recipes so much that they don't resemble the original.

I guess I’m an anomaly. I own 2 of his cookbooks and subscribe to his channel but I’ve never really been that impressed. All his recipes are not through, too many ingredients and take way too long to make to be relatable, for me.
I’ve been a follower of Gaz for many years and have several of his books. However, his recipes are too complicated with too many ingredients for me. And too time consuming. It’s been interesting to watch his progress right up to his current farm lifestyle.
@ old man and not well these days, Jeremy, so it’s lentil or bean & tofu curries, tofu stir fries, homemade seitan sausages and steak, soup etc for me these days. However, I still enjoy watching vegan TH-cam cooking videos. I have a library of about 70 or so vegan cookbooks collected over the years but sadly now gathering dust.
You'd have been much closer to vegan mince on the lasagna if you'd diced the mushrooms and mixed them with the whole lentils rather than pureeing them. Then the dish wouldn't have been so gloppy. Adding some chopped walnuts would have given it a more meaty texture, as well. Also, I've heard you say in another video that you don't like to use spray on oil because of the chemicals in the propellant, but you know they make spray bottles for cooking oil that use air pressure to make it spray, right? You add the cooking oil of your choice, pump the lid a couple times and spray to get a nice fine mist of oil, almost certainly much less than a tablespoon For things that are normally deep fried and hard to replicate in a WFPB way, the finest spray of oil before putting the item in the air fryer would help it get much more crispy and would add nominal fat and calories to the overall dish. Even assuming that it did dispense a full tablespoon, that would end up being an extra 30 calories per person if the dish made four servings. An extra 30 calories in an otherwise low calorie dish like that salad would be totally worth it. Just a thought...

Vegan mince is basically plant based ground “beef”. I bet you could do those baked grated tofu curl things you do as a substitute 🍅🍆🧅🧄
Mushrooms and lentils should be pulsed in the food processor, not puréed. Probably changed the texture of the sauce in the lasagne🤷🏻♀️
For the béchamel you can use navy or cannoli beans for thick sauce.

I make the lasagna about once a year, but I do it with vegan mince and the vegan butter, but no vegan cheese. It is a terrific vegan lasagna!
