    Thank you for your video and for explaining the difference in the stiffness of peaks! I beat my meringue in a stand mixer and was too timid in my timing - mine were definitely more medium-stiff than stiff and as a result my cake flattened quite dramatically. But watching your video afterwards I can understand why! I also struggled to get the swirl pattern looking as nice - I think next time I will use less meringue on top, or potentially scoop some out when it is medium then let the rest come to a stiff peak? The idea of a compote on top is fantastic, I whipped some up to add as a topping too. Thank you for your video :-)
