If I remember properly is due to Dehya's tomb (elemental skill). Ganyu will receive the dmg but not get knocked, and a certain % of the dmg will be transferred to Dehya.

You can but removing dehya will greatly affect your run since ganyu gets hit a lot and it interrupts her charge attacks
