I don’t think villagers were ever enslaved by ancient builders, or at least not on any substantial scale. The reason why villagers use emeralds is more likely simply because they traded with each other a lot, so over time they naturally adapted a common currency. They use it to this day because having a standard currency is useful and it would be too much of a struggle to estabilish a new currency, especially since villages are spread far and wide and they have only limited means of communicating with each other. I also don’t think the immunity of villagers against zombie virus would have much to do with their noses. Otherwise I mostly agree with your theory.

To me the inflation theory seems the most reasonable, too much of something starts to lose its value and therefore becomes less desirable.
