I never would have thought of peach and chocolate together! It's like once I made ginger bread, and since I had a bunch of eggs and lemons, I decided to make lemon curd and tried them together and it was so good! There are some flavor combinations that we would never think work together but could surprise us!
I love a la mode pastry too. The pastry has to be warm, but don't let the ice cream melt too much. Clotted cream sounds good too, but hard to find in the US.

I’m from Texas and I’m pretty sure most homes in America don’t make anything comparable to an award winning restaurant so what you’re eating now is likely more authentic to what most Americans make themselves. Those ingredients are what I use in mine and yes fresh Peaches are the best, the only difference in how I fix mine is the Cobbler dough I put my dough in then add my Peaches with the regular sugar, brown sugar, cinnamon, lemon juice and peach juice to the dough and let it rise up through the Peaches. It's a Southern Dessert my Mom is from Darlington South Carolina and that's how we were taught to make it with heavy cream or vanilla ice cream on top. Original cobblers were made with a pie crust pastry sprinkled with sugar. We serve the ice cream on/alongside the cobbler because when it melts it makes every bite taste rich & creamy.

The recipe my granny used was this: Mix 1 cup sugar, 1 cup self-rising flour and 1 cup of whole milk. Melt one stick of butter in a 9”x12” pan in the oven at 350F (180C). When the butter is melted, pour in one large can of yellow cling peaches in heavy syrup. Pour the batter mixture over the peaches. Bake until golden brown. Serve warm with vanilla ice cream.

That's the recipe I use.. I'm 72 years old and this same recipe was passed down to me from my mom and from her mother (my grandma). So easy and quick. I have used this as a basic with other kinds of fruit. I have even used canned pie filling in a pinch, too. Yum😋🤗 edit= you can use self-rising flour, or all-purpose flour...if all-purpose flour I have added 1 teaspoon baking powder with a pinch of salt. I think some people have just used plain all-purpose flour.(I have used just plain all-purpose flour too) But I suggest trying the 3 different versions and decide which one suits your taste...

Each region has a type of fruit cobbler, but sometimes different names. The southern type traditionally uses peaches, northeast usually apples; the northwest is known for its use of blueberries or blackberries. They also can have different types of toppings or crusts. Southern cobbler usually has a biscuits type topping like James mother made. In the Pennsylvania Dutch area where my family is from we called them pandowdies. The top was like a traditional pie and when serving the crust was stirred down into the filling giving it a "dowdy" appearance. Also can be made with streusel like topping. Northwest they are traditionally referred to as "buckels", and can have either a streusel or biscuits like topping. Regional most areas of the US eat some type of cobblers, they are as diverse as we are. There are no wrong types of cobblers, make them with what you like. Eat them hot or cold, with or without ice cream or melted cheese. Yes, I said cheese, a slice of cheddar cheese atop a hot apple cobbler or pie is delicious. 😋
Your mom(mum) did a very good job. I remember(long ago) my mom made peach cobbler with pastry strips she cooked before adding to the cobbler. They were topped with sugar & cinnamon. (Any leftover pastry strips were offered to my sister & me for snacking.) Because they were baked before assembly, they didn't taste doughy in the middle of the cobbler. I never was good at baking, so I never tried to duplicate her recipe. 👍👩🍳❤
for my cobbler, I make a batter for the crust. I use flour, butter, plus butter in my peaches. I use milk...mix it up, until the batter is the consistency of pancake batter...pour it over peaches and do not stir...

Cobblers are universal with all kinds of fruit. Usually served with ice cream or whipped cream. If you have an empty, clean spice jar with a shaker top, mix some cinnamon into sugar. It is an easier way to "dust the top" and not get those clumps of cinnamon all in one spot.
I'm not a cook, though I love eating what is cooked, but I thoroughly enjoy watching your videos because of your attitude, it's so refreshing. You look great by the way, and your fashion choices seem very "American suburbia"! One other thing, I love how you, and James too, often use the word "gorgeous" in ways that we never would, like something "smells gorgeous."

Cobbler and most other baked goods benefit immensely from resting and cooling a bit before enjoying; it allows the baked part to 'settle' and firms them up. :) The recipe you used sounds great!
Vicki, you are such a pleasure to watch. Your enthusiasm and joy of cooking & making new recipes is wonderful!! The only thing I do different is add a small amount of nutmeg with the cinnamon on the peaches. It turned out perfectly. Next time add some vanilla ice cream or whipped cream.
A NICE ADDITION to the Cobbler is to serve it piping hot with a scoop of ice cream... the Hot Cobbler with the cold of the Ice cream at the same time is amazing. GREAT cooking from an amazing lady!

But I thought I suggest another easy recipe, if interested. Easy Fish Tacos Crispy golden-brown fish fillets, wrapped in warm corn tortillas and topped with a delicious slaw and served with a sprinkle of fresh cilantro and lime juice First in a large bowl combine 3 cups green cabbage, shredded, half a cup red onion diced, 1cup sour cream, 1 lime, juiced and 1/4 tsp. salt combine and chill until ready to serve. Next...Tacos 4 Tilapia fish fillets 1/4 tsp. cayenne pepper, ground 1/2 tsp. garlic powder 1/2 tsp. cumin 1/2 tsp. salt 1/2 tsp. pepper 16 corn tortillas garnish with cilantro and lime juice to taste Next combine in a bowl all the spices cayenne pepper, garlic powder, cumin, salt n pepper blend and season each side heavily on both sides. over med.-high heat in a skillet cook two fillets at a time for around 8 to 10 mins. flipping halfway and repeat for the remaining fillets. Then using a fork after the fillets are done and crispy golden break the fillets a part into bite size pieces Right before serving place about a teaspoon full of oil in a small frying pan over medium heat place a corn tortilla in the pan leave for 2 or 3 mins and then flip...were only warming the tortilla not browning it. Remove from the pan and start assembling the tacos with some pieces of fish followed by the slaw and garnish with the cilantro and lime. This goes great with Spanish rice on the side. (P.S. if there is too much oil in the pan with the first taco try reducing the amount of oil the second time. After each additional taco) 😘👌

The first time I ever ate peach cobbler was on a camping trip. It was cooked in a dutch oven over a campfire. One of my favorite camping foods ever.

I too enjoy a nice peach cobbler with Ice Cream. The biggest difference that I could see is that I eat it with a fork instead of a spoon 😂. Other than that as per usual I enjoyed another good video. Please tell James' mom to keep up the good work. I think she's doing an outstanding job.

Looks really good. Did you use fresh, frozen or canned peaches? Chocolate ice cream is a really odd choice to pair with the peaches. Vanilla ice cream is the way to go or perhaps some whipped cream.

Peach, blueberry and apple cobblers were a summer time staple when I was growing up, dont have them as often but still my fav's.
I went and checked, and when your mom does the cooking videos, that pulls in the most views per video. I've also noticed that Mr H's wife has got into doing the cooking American foods videos too.

It's best with fresh peaches, but next best would be if you can find frozen- the taste and texture will be a lot closer to fresh than the canned!

Each region has a type of fruit cobbler, but sometimes different names. The southern type traditionally uses peaches, northeast usually apples; the northwest is known for its use of blueberries or blackberries. They also can have different types of toppings or crusts. Southern cobbler usually has a biscuits type topping like James mother made. In the Pennsylvania Dutch area where my family is from we called them pandowdies. The top was like a traditional pie and when serving the crust was stirred down into the filling giving it a "dowdy" appearance. Also can be made with streusel like topping.
Northwest they are traditionally referred to as "buckels", and can have either a streusel or biscuits like topping. Regional most areas of the US eat some type of cobblers, they are as diverse as we are. There are no wrong types of cobblers, make them with what you like. Eat them hot or cold, with or without ice cream or melted cheese. Yes, I said cheese, a slice of cheddar cheese atop a hot apple cobbler or pie is delicious. 😋

Your mom(mum) did a very good job. I remember(long ago) my mom made peach cobbler with pastry strips she cooked before adding to the cobbler. They were topped with sugar & cinnamon. (Any leftover pastry strips were offered to my sister & me for snacking.) Because they were baked before assembly, they didn't taste doughy in the middle of the cobbler. I never was good at baking, so I never tried to duplicate her recipe. 👍👩🍳❤

for my cobbler, I make a batter for the crust. I use flour, butter, plus butter in my peaches. I use milk...mix it up, until the batter is the consistency of pancake batter...pour it over peaches and do not stir...

Cobblers are universal with all kinds of fruit. Usually served with ice cream or whipped cream. If you have an empty, clean spice jar with a shaker top, mix some cinnamon into sugar. It is an easier way to "dust the top" and not get those clumps of cinnamon all in one spot.
I'm not a cook, though I love eating what is cooked, but I thoroughly enjoy watching your videos because of your attitude, it's so refreshing. You look great by the way, and your fashion choices seem very "American suburbia"! One other thing, I love how you, and James too, often use the word "gorgeous" in ways that we never would, like something "smells gorgeous."

American born and raised in south georgia here. her cobbler looks amazing! nothing too fancy which is what you want. nothing wrong with canned peaches they work beautifully in cobbler. there is clearly love put into this recipe which is what matters and makes it taste all the better. your mom is so cute love watching her videos! keep up the cooking videos they are so fun to watch!

As a child I would often eat cobbler with cream poured over for breakfast. Can be served warm or cold. Good for you!

Cobbler and most other baked goods benefit immensely from resting and cooling a bit before enjoying; it allows the baked part to 'settle' and firms them up. :) The recipe you used sounds great!
Vicki, you are such a pleasure to watch. Your enthusiasm and joy of cooking & making new recipes is wonderful!! The only thing I do different is add a small amount of nutmeg with the cinnamon on the peaches. It turned out perfectly. Next time add some vanilla ice cream or whipped cream.
A NICE ADDITION to the Cobbler is to serve it piping hot with a scoop of ice cream... the Hot Cobbler with the cold of the Ice cream at the same time is amazing.

I think it’s so fun to watch you cook American dishes. Peach cobbler is good with vanilla ice cream or homemade whip cream. The fun thing about cobbler is you can use any pie filling fruit, cherry, apple, and berry. Have fun experimenting. Cherry is my favorite.

I'm so glad you enjoyed the cobbler and the wonderful thing about cobblers is you can use different fruits and just adjust your spices for the fruit you're using. But I thought I suggest another easy recipe, if interested.
Easy Fish Tacos
Crispy golden-brown fish fillets, wrapped in warm corn tortillas and topped with a delicious slaw and served with a sprinkle of fresh cilantro and lime juice
First in a large bowl combine 3 cups green cabbage, shredded, half a cup red onion diced, 1cup sour cream, 1 lime, juiced and 1/4 tsp. salt combine and chill until ready to serve.
Next...Tacos
4 Tilapia fish fillets
1/4 tsp. cayenne pepper, ground
1/2 tsp. garlic powder
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
16 corn tortillas
garnish with cilantro and lime juice to taste
Next combine in a bowl all the spices cayenne pepper, garlic powder, cumin, salt n pepper blend and season each side heavily on both sides. over med.-high heat in a skillet cook two fillets at a time for around 8 to 10 mins. flipping halfway and repeat for the remaining fillets. Then using a fork after the fillets are done and crispy golden break the fillets a part into bite size pieces
Right before serving place about a teaspoon full of oil in a small frying pan over medium heat place a corn tortilla in the pan leave for 2 or 3 mins and then flip...were only warming the tortilla not browning it. Remove from the pan and start assembling the tacos with some pieces of fish followed by the slaw and garnish with the cilantro and lime. This goes great with Spanish rice on the side. (P.S. if there is too much oil in the pan with the first taco try reducing the amount of oil the second time. After each additional taco)
