I'm totally trying this. I do save and freeze my chicken skins because when I'm cooking a stir-fry or something that uses a small amount of oil, I toss in defrosted chicken skin with the oil to render down and add umami and richness to the flavor and then just remove it before serving (by then it's usually crackly crisp and delicious to just eat). This works great for adding richness to stews and soups too.
