Haven't played the game, but from context clues i think the intended way to find the hidden blocks is by playing as specific characters. I think the hidden blocks become visible when specific characters come close, allowing certain characters to find specific parts more easily
Some of my favorite videos of his is just... his genuine play through of Mario Odyssey and A Hat in Time. I fully get why he thinks needs a weird spin on them and he may be right, but I do enjoy just normal play throughs now and then

i just realized what the character blocks are. hidden blocks that reveal themselves to you if you are playing as the character on them. me and a friend were playing and one of us was yellow toad and we found the one coin thing really easily but now i see where the difficulty in that can happen if you dont use that specific character.

As far as non-spinoff games go, the only games I can think of where Bowser is NOT an antagonist would be Super Mario Land 1 (Tatanga) and 2 (Wario), and potentially Super Mario RPG, the later Paper Mario series, and the Mario & Luigi series (if you don't count their scripted fights in the RPG/M&L series)
One thing I immediately noticed is that this game feels a lot like A Hat in Time. Having badges that give you either abilities and passives and stuff. Or you could say it uses forbidden Paper Mario gimmicks.
The mario anime ova is awesome not only does mario gets cucked but Luigi grinds for coins for the entire movie and saved the day because of it ( also hi jome )
I only found out about that hidden block star piece because online play was on and I saw someone pushing something, which told me pipes could be pushed. Then when I found it I was able to direct them to it!
As someone who has 100%ed the game on my very legitimate copy (all medals), it is really not as hard as Alpha makes it out to be. You need to grind Flower Coins to get all the Standees but that's about it.
