Sweet Potato Pie Recipe
Ingredients
For the Pie Crust:
• 500g all-purpose flour
• 200g butter (cold and cubed)
• Cold water (as needed)
For the Sweet Potato Filling:
• 3 large sweet potatoes (about 500g)
• 1/4 cup granulated sugar
• 1/4 cup brown sugar
• 1/4 cup melted butter
• 1/4 cup whole milk
• 1 large egg
• 1/2 teaspoon pumpkin spice
Instructions
Step 1: Prepare the Pie Crust
1. In a large mixing bowl, combine flour and cold butter. Use a pastry cutter or your fingers to mix until the butter forms pea-sized chunks.
2. Gradually add cold water, 1 tablespoon at a time, and mix until the dough just comes together.
3. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Cook the Sweet Potatoes
1. Peel and chop the sweet potatoes into chunks. Boil them in a pot of water until tender, about 15-20 minutes.
2. Drain the sweet potatoes and mash them until smooth.
Step 3: Make the Sweet Potato Filling
1. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, melted butter, milk, egg, and pumpkin spice. Mix until creamy and well-blended.
Step 4: Assemble the Pie
1. Preheat your oven to 180°C (350°F).
2. Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch pie pan. Trim the edges and crimp them as desired.
3. Pour the sweet potato filling into the pie crust and smooth the top with a spatula.
Step 5: Bake the Pie
1. Bake the pie in the preheated oven for 45-50 minutes, or until the filling is set and the crust is golden brown.
2. Let the pie cool completely before serving.
Tips for the Perfect Sweet Potato Pie
• Use cold butter for a flaky crust.
• Add a pinch of salt to the filling for enhanced flavor.
• Serve with whipped cream or a sprinkle of cinnamon for an extra festive touch.
Note: My apologies, in the video I mentioned 120g of butter, but the correct amount is 200g of butter.
