Great, informative video. As Derek said above: Use a TOASTED sesame oil, especially for fried rice. Also use oyster flavored sauce (no, it doesn’t taste like oysters, and it’s a very thick sauce). Just like when using just a little toasted sesame oil, use a little oyster sauce towards the end and mix it in well. Don’t overdo it with either or it can cause your rice to flash steam because of the moisture content and it will overpower the flavor and could make your rice soggy. A little goes a long way. I spent a month frying rice 3 times a week trying to find the taste my family and friends like best, and adding those 2 ingredients resulted in the best tasting restaurant style fried rice.

I recently picked up the Weber full-size griddle insert for my 3-burner Gensis II. New to griddling so your videos have been pretty good for fast-tracking me to using it. The insert is Carbon Steel and I like it, but only done 1 cook on it thus far.
Oh that sounds pretty cool I didn't realize they had inserts for thoughs. I know the genesis is supposed to be a really nice grill. I'm glad my videos are helpful, thanks for watching man.

My go to oil was usually peanut oil, adding butter when needed. But after watching Sam the cooking guy, I bought some avocado oil and have become a fan. I worked at a bakery for a bit, and we used palm oil for cooking doughnuts at 375. Wondered if anyone had used it on the griddle and what their thoughts were.
I've been using peanut oil on my griddle. Have not used avocado oil on the griddle, but do use it in my cast iron skillets. It is nice. Probably about double the price of peanut oil (going from memory, which I would not really trust too much!)
you season with flax oil because it's the best oil for polymerizing your griddle. pro tip - use flax oil for your first 3 or 4 seasoning layers & then add 2 or 3 seasoning layers of grapeseed oil on top of it

Yep, I always have canola oil on hand, good high heat neutral oil, I make my own clarified butter for added flavor, Bacon up is also good , I think I'll skip the avacado oil, that would probably cut into my beer money 😅
I love your videos. You forgot the most important oil. Grapeseed oil. I forgot the video someone did. But they tested the molecular hardness of every oil and grapeseed oil is the hardest of all to season with but it has a horrible flavor. So I did 3 coats of that. And like 1 or 2 coats of lard. Love the way mine cooks. 😊
FYI, regular/pure/light sesame oil (the kind you feature in your videos) IS for cooking, frying, and sauteing. TOASTED sesame oil is specifically for finishing. Toasted sesame oil will be explicitly labeled as such, and if it doesn't say toasted (or some I've seen say roasted), then it is a regular sesame oil, which is different than the finishing oil.

@@contentm3893 You shouldn't cook with any refined oils either. The refining process removes everything good in the good oils and then makes them as bad for you as Canola and Vegetable Oil. That is why you should always stick with 100% real Extra Virgin Olive Oil (Pretty much most olive oil in the stores is fake so beware!) Cold Pressed Avocado Oil. Also Cold Pressed Coconut Oil. As for Butter, make sure it is actually Butter and not Margarine and also try and find grass fed Butter, which you can cook in, if you are cooking at a lower temperature and if it is something quick like eggs or a grilled sandwich.
I used to cook with avocado oil, but I stopped using it because I find the taste of very bad. I've scrapped good steaks with it. I don't know if it's true but Chef Jean-Pierre said that clarified butter (or gee) is one of the best thing for cooking. I will give it a try. I won't put too much because the taste is very strong. Much more than standard butter.

Great video man! I have been using grapeseed oil. It has a pretty high smoke point of about 420.. I heard it being recommended when I I first got my griddle a month ago. I bought a 3 liter jug of it at a restaurant supply store near me for $25. But I plan to switch to avocado once I use this up..
Yes that's actually what they use at the drive-ins theaters to cook popcorn in that might be a good seasoning oil thanks for the tip I always use canola myself 👍

is it okay to use vegetable oil? my wife bought the huge bottle from sams for her classroom for a project and now it just sits at the house. i use it cooking in the kitchen but havent used it on the griddle before. Other than seasoning/protecting my griddle, I use almost exclusively butter (300F) and beef tallow (400F) to cook. You can make your own tallow by saving the leftover grease and fat from slow cooking roasts, etc. then let it separate and harden in the fridge. I was shocked to learn how shady cooking oils really are with respect to truthfully describing ingredients and sources. A lot of oils get blended with "junk" oil from other seeds and such that can be toxic when overheated (grapeseed, for example). No two olive oils are created equal, for example, so there's a ton of variation and inconsistency across brands and labels. Some of these questionable oils also ship in substandard plastic containers that leech phthalates, which are bad to consume from on their own, but even worse when heated. Generally, look for glass containers if you can.
I've heard that too and honestly the more research I did for this video the crazier it was. I still use canola bc it's cheap but aft reading a lot of these comments I might start trying to cut all that oil out. Butter and natural animal fats just seem like a safer way to go.
I actually have no experience at all with using tallow on the griddle. A few other people have mentioned so I think I need to get some and give it a go!
We personally quit using canola oil, as well as other seed oils. They are inflammatory to your digestive tract. Avocado oil, regular olive oil and ghee are all better and healthier.

Decided to prep mine for the upcoming warmer weather and it wasn’t putting out enough juice on fresh tank. Also used 800 grit sandpaper and 0000 steel wool to smooth the top out. I know you should season your grill after cooking and cleaning, should you also put some oil down before you throw something on it? My eggs were sticking this morning and I didn’t put down any oil or anything
Yes I start pretty much all my cooks with a thin layer of oil. Especially eggs they will stick on you really quickly. When I do eggs I do a thin layer oil and a pad of butter then I pour down my eggs. The oil keeps the butter from burning and the butter just makes everything taste better. Then you also have two fats down as a lubricant so you get less sticking. I hope that helps. Thanks for watching Zach.
For the love of god, STOP using concentrated vegetable oils(!) You don't need to use fancy ghee, regular old butter is perfectly fine. You can also keep pork and beef fat... FYI, it's best to separate out the extra water in beef fat and you can even mix it with bacon grease to prolong the shelf life. Bon appetite 😁
Canola or gmo made oil are very bad for us but since they are cheap its the best to season with it, but to cook use coconut, avocado, olive, grass fed ghee, wild caught bore lard and others are better for our health then seed oils.
That's what I did with the cookies. Also I've seen people use it in place of butter. Kind of crazy but they say it's healthier. Again, I have no idea if that's true or not.

So I'm kicking myself, yesterday my wife and I went to a swap meet and seen a Blackstone 17" griddle with lid and bonus burner tabletop. The gentleman selling it only spoke Spanish and did not understand when I asked if I can open the box and see it. So we left and when we were about to leave I asked my wife let's see if it is still there... nope sold. He was selling it for $100😮
Oh man that's a hell of a price. Well it's no big deal keep checking facebook marketplace and craigslist. Sometimes I see them on there for good prices.

This is great but I only eat natural animal fats. All that commercial oil is bleached and deodorized. I’d love to see a comparison of things like filtered bacon fat, tallow, etc. I’m getting my first griddle and going to season with lard and see how it goes. Or even a comparison between the standard canola and avocado oil against animal fat.
Those are some great ideas I will add them to the list. I've used tallow to help moisten a brisket while smoking it but that's it. I also don't really have any experience with lard so I think tha would be a great video to make of me learning about it. Thanks for the suggestions.

I agree Johnny. I use canola oil and buy it by the gallon. It's cheaper and leaves more money for beer (also a necessary tool for griddling).

EVOO can go over 400 degrees, plus has a large amount of antioxidants which will help reduce free radicals released when cooked at even higher temps.

john Gordon's triple filtered bacon 🥓 grease. I use it for cooking and reseasoning. with some butter for cooking for more flavor.

I use olive oil and love it
Other than seasoning/protecting my griddle, I use almost exclusively butter (300F) and beef tallow (400F) to cook. You can make your own tallow by saving the leftover grease and fat from slow cooking roasts, etc. then let it separate and harden in the fridge.
I was shocked to learn how shady cooking oils really are with respect to truthfully describing ingredients and sources. A lot of oils get blended with "junk" oil from other seeds and such that can be toxic when overheated (grapeseed, for example). No two olive oils are created equal, for example, so there's a ton of variation and inconsistency across brands and labels. Some of these questionable oils also ship in substandard plastic containers that leech phthalates, which are bad to consume from on their own, but even worse when heated. Generally, look for glass containers if you can.
I've heard that too and honestly the more research I did for this video the crazier it was. I still use canola bc it's cheap but aft reading a lot of these comments I might start trying to cut all that oil out. Butter and natural animal fats just seem like a safer way to go.
I guess back in the day the secret to McDonald’s French fries was beef tallow. Then they got sued by vegans and had to change their formula.
So maybe beef tallow on hash browns would be awesome ?????

We personally quit using canola oil, as well as other seed oils. They are inflammatory to your digestive tract. Avocado oil, regular olive oil and ghee are all better and healthier.

Decided to prep mine for the upcoming warmer weather and it wasn’t putting out enough juice on fresh tank. Also used 800 grit sandpaper and 0000 steel wool to smooth the top out. Re-seasoning as we speak. Have a great year!
I know you should season your grill after cooking and cleaning, should you also put some oil down before you throw something on it? My eggs were sticking this morning and I didn’t put down any oil or anything
Yes I start pretty much all my cooks with a thin layer of oil. Especially eggs they will stick on you really quickly. When I do eggs I do a thin layer oil and a pad of butter then I pour down my eggs. The oil keeps the butter from burning and the butter just makes everything taste better. Then you also have two fats down as a lubricant so you get less sticking. I hope that helps. Thanks for watching Zach.

For the love of god, STOP using concentrated vegetable oils(!) You don't need to use fancy ghee, regular old butter is perfectly fine. You can also keep pork and beef fat... FYI, it's best to separate out the extra water in beef fat and you can even mix it with bacon grease to prolong the shelf life. Bon appetite 😁
I primarily use avocado oil, but mainly out of laziness for not wanting to hog up space with too many oils😂

Canola or gmo made oil are very bad for us but since they are cheap its the best to season with it, but to cook use coconut, avocado, olive, grass fed ghee, wild caught bore lard and others are better for our health then seed oils.

That's what I did with the cookies. Also I've seen people use it in place of butter. Kind of crazy but they say it's healthier. Again, I have no idea if that's true or not.

Lard / bacon grease
So I'm kicking myself, yesterday my wife and I went to a swap meet and seen a Blackstone 17" griddle with lid and bonus burner tabletop. The gentleman selling it only spoke Spanish and did not understand when I asked if I can open the box and see it. So we left and when we were about to leave I asked my wife let's see if it is still there... nope sold. He was selling it for $100😮
Oh man that's a hell of a price. Well it's no big deal keep checking facebook marketplace and craigslist. Sometimes I see them on there for good prices.

What is a Canola ?
This is great but I only eat natural animal fats. All that commercial oil is bleached and deodorized. I’d love to see a comparison of things like filtered bacon fat, tallow, etc. I’m getting my first griddle and going to season with lard and see how it goes. Or even a comparison between the standard canola and avocado oil against animal fat.
Those are some great ideas I will add them to the list. I've used tallow to help moisten a brisket while smoking it but that's it. I also don't really have any experience with lard so I think tha would be a great video to make of me learning about it. Thanks for the suggestions.
If you're going all in on animal fats the best by far is bear fat.
