I’ve been wanting some Mofongo since I got back from Puerto Rico. Every place I seem to go to around me makes it in a red sauce. I had it in a white sauce when in PR and I have not been able to forget it! I will be making this super soon! Thank you!

My Dominican friend used to tell me that her grandmother used to tell her that you had to "espantar la agua" when you boiled the plantains. She meant you had to get it to a rolling boil, but we used to laugh and joke that you had to scare the water by yelling at it. I shared this with my kids when they were younger, and so now every time they boil plantains, they look into the pot of water and yell "aaaugh!" to "scare" it :) I know you aren't boiling them in this recipe, but I recalled this humor and thought I'd share it with you. Beautiful Pilon you have. Good grief, that looks delicious, Kelvin. Thanks a ton for sharing such deliciousness!
Too funny! I love that! 😂 with the boiling method, you may be talking about Mangú, which is a traditional Dominican dish, not Mofongo, although they both are very delicious 😋
