Two observations: Fighting a fish and maintaining the integrity of the video, turning the camera around when the fish went downstream. Pure dedication! Secondly, the duct tape patch on the shoulder of the puffer jacket. Love it. Probably tore it on some of that filthy blackberry. Awesome video once again!

As a fellow home cook buy a vacuum sealer and some bags foranything you plan to marinate or brine, will help pull all the flavour into the meat, love your stuff keep up the good shit 👍 🤙
Hey brother, get your self a brine needle to inject the meat and will get to the centre of the meat and you won’t have the brown spot in the middle, just a little tip from a butcher, as always an awesome vid love the Energy you have and the passion, next you will have to make some venison cabana or strass, you will never look back

Gday mate. I've just stumbled upon your channel and at the moment are binge watching it. Your enthusiasm, articulation and zest for the outdoors really is quite infectious. Apologies if you've already posted a video like this.... but wondering if it might be an option to post something for the plebs (re folks like myself). I'm a shooter (not a hunter) and love to fish(but not an angler) I wonder if an episode explaining basics, ie -the gear you use. Rods, reels, guns etc.? -how to know sections of stream to fish.? -how to choose what to shoot/catch and what to leave alone.? -how do you cart a deer out of remote country? -sign's to read for hunting? -the correct area of body to shoot something? -basic butchering? I suppose a video for beginners is what I'm after. Absolutely love your work. And you better market some 'good times, natural' tee shirts before I do. Lol. Cheers, Mitch.
Great video mate. I use a cheap $10 brine/marinade injector when I make venison ham. Helps get the brine all the way into the centre and stops the grey bit in the middle that the brine didn't get too.
Great stuff Alex that Pastrami looked the bomb mate and the trout looked good as well to bad Triso lost that whopper I bet he was pretty disappointed but I guess that's why it's called Angling not catching

If I may suggest ordering yourself a brine injector-lots of places stock them, I bought one from My Slice of Life in Victoria. That way you can make sure the brine gets all the way into the middle of the meat.

Love the videos keep up the great work. I use red gum wood chips for my Venison pastrami work a treat cut them your self way cheaper then buying them. And definitely use a brine needle next time to get to the centre of venison. Keep up the good work 🤩🎣🔥
Hey, try getting some peach paper to wrap up your meat. It give the same result, but the peach paper allows some of the moisture to evaporate. Bunnings and decent bbq shops will have it.

You couldn’t be more wrong man, an animal in shock is motionless, if it blinks then there’s every chance it’s conscious and therefore possibly suffering. Also I’ve heard more than one story of a deer getting up and adrenaline charging a hunter. If that deer is a Sambar stag then the hunter could be killed
if you dont let the meat rest and you cut into it its a complete waste of time, you will ende up with a damn dry piece of meat. also you are meant to grind the rub not put it on tlike that

I’ve recently started smoking meat and am no pro by all means, when I smoke a large piece of meat beef or pork ( haven’t done venison ) I leave it wrapped in foil and then wrapped in a towel and place it in an esky for up to 6 to 8 hours still comes out warm and juicy. Keep up the great work and very inspiring aspect of life.

Helpful tip, use boiling water in the smoker, that way it starts steaming faster and doesnt have to heat all that water up to temp.

Trout spawn they work best, after spawn they are no longer in the system and you could probably get some from fly fishing shops or eBay of the likes

I sat it covered in foil for about 20mins, so you reckon a longer rest is more ideal? I enjoyed eating it hot but would room temp be more ideal?
