    I want to say thank you Guga and share a story: my father-in-law is in the early stages of Alzheimer's, and he's starting to lose his memory. I wanted to pull out all the stops and make him an amazing dinner, so I combined all my favorite steak tips I've learned from your 3 channels over the years.
    I bought 4 filet mignons (1 1/2"-2" thick), dry brined them with salt, pepper, garlic powder, and MSG, cooked them sous vide at 131 F for a couple hours, seared them at an extremely high heat in wagyu tallow for 1 minute per side, then basted them in a lightly seasoned, melted wagyu tallow sauce that included minced garlic, oregano, salt, and MSG. He called it "the perfect meal"... twice. My mother-in-law kept repeating "wow... WOW...", getting louder each time, and shaking her head in disbelief at how good it was. The steak was unbelievably tender and succulent, and the flavor was rich and beefy, accented beautifully by the herbs, and all enhanced by a light touch of salt and MSG. It's a meal that I think he (and all of us) will remember for a long time.
    I'm sure you'll never read this, but I just wanted you to know how to the experiments you perform and the tips you give can have a real impact on people's lives. Thank you for doing what you do.

    People. I bought the wygu tallow. Snagged some aged ribeyes from my butcher. Seasoned them appropriately. Slathered on some tallow. Vacuum sealed them. Sous vide. Dried off. Applied little more seasoning. Thin layer of tallow and seared on a piping hot charcoal grill……
    HOLY SH*T this was the best steak I’ve ever grilled in my life and I can grill a steak that will embarrass local steakhouses. My buddy and I cleaned the bones.

    What about dry aging in beef tallow , maybe it'll be like the butter aged steak??

      dry ageing in butter doesn't actually taste any different than a normal dry aged steak, its just a lot cheaper than buying dry aging bags and a vacuum sealer, or a dry aging fridge. It also reduces moisture loss. People do sometimes dry age in beef tallow with smaller cuts, such as a tenderloin, because then you don't have to cut off any pellicles and you won't lose any meat. Dry aging with beef tallow also doesn't taste any different than a butter aged steak, but it does prevent even more moisture loss.

    Now that you know to add the fat at the end, I am REALLY curious about an experiment with duck fat vs. "butter of the gods" vs. wagyu tallow. Same experiment. Same side.

      i tell you what duck fat is rad i coated some sausages with it then smoked them it was awesome. potatoes fried in duck fat are the best, better than peanut oil.

    Ive been using the tallow for a while now as well, and I tried injecting the tallow into a steak a few time, and have been pleasantly surprised. Can't really do the whole control steak or perfect cook like you. So maybe you can test it out.
    I basically have a small meat suringe that I use to inject multiple veins of the tallow through out the steak before cooking, and it makes a massive difference.

      Have you tried using something like a xspecial meat tenderizing tool on the steak then inserting tallow and sealing in vacuum bag to cook sous vide? If so, how did it turn out. I think it might be possible to get more of the tallow in the meat this way.

    I already have a tub of this tallow in my fridge. I most recently used it with some butter melted onto a ribeye I was searing on the grill. I'd cooked it sous vide to 135f perfection for 2 hours, but decided to try something new when it was done, to sear it and add flavor. I dunked it in chilled water so it dropped back down to 100f, while prepping the coals for the grill, then took it out of the bag and put a meat thermometer in it. I put a big glob of butter and wagyu tallow on top, right as it hit the grill, and spread it all over as it was melting. Once it's melted, you immediately flip it right over the hot coals, and let the flare up help seal that sear in, while you melt another big glob on the other side. Once I seared it to perfection, I pulled it off the hot coals and moved it to the cool side of the grill, before putting the lid on and letting it finish with some extra smoke. It was already around 125-129f when I pulled it off, but it still spent another 2 minutes in the smoke getting that smoke flavor. Absolutely the best steak I've ever done, the sear was only crust deep and the steak came out extremely juicy, and finished on the grill much faster than an uncooked steak generally would. I've been meaning to make fried chicken as well with your recipe and using tallow, IDK when I'll get around to it though

    Guga, I've gotta thank you so much. Thanks to your videos, I finally managed to get a sous vide setup of my own. So far I've only done a couple of simple chuck roasts in it, but it has come out *so* tender it's comparable to prime rib. I can't wait to see what else I can do with it!

    i'd like to see you do an experiment at some point between the wagyu tallow and some other, cheaper tallow.
    i'd wager the wagyu will still be better but it'll be nice to have a point of reference since the wagyu tallow is about 50% more expensive.

    fried up some tater tots this morning in wagyu beef tallow, "not beefy, just Better"! Thanks Guga, I've been using it on steaks and burgers, never thought to use if for frying potatoes.

    I usually inject it straight into the steak then brush some on top while it’s smoking. I finish it off in the skillet, using the tallow instead of oil

      Very little of the salt actually penetrates the steak - he is using a coarse salt. When the meat is cooked in the sous vide, most if not all is dissolved into the meat juices and is no longer on the meat after it is cooked and patted dry. In this case, the salt is acting mostly as a short brining agent.

      I'm looking forward to trying it! I eat a lot of steaks, and I've been using avocado oil; I hadn't thought of trying tallow. I think, ounce for ounce, this wagyu tallow is actually cheaper, too!

    So... This is in line with whether to add butter 'in' the sous-vide bag or to only add it at the basting phase video (from some time ago).

    Wow I'm actually surprised the basted one turned out better than the sous vided one.
    I got a couple questions though. Can you save this after basting or frying with it like bacon fat? And can you use it in a deep fryer several times? I don't want to one-and-done it with something this expensive. I normally get several cooks out of my deep fryer oil, and usually save and reuse my bacon fat. Thoughts?

    I have a question. I have some left over beef fat trimming from cleaning a brisket. I put them in vacuum seal bags and left them in the freezer. Can I sous vide it to get tallow or I have to fry them in the sauce pan

    Have you tried using something like a xspecial meat tenderizing tool on the steak then inserting tallow and sealing in vacuum bag to cook sous vide? If so, how did it turn out. I think it might be possible to get more of the tallow in the meat this way.

    I bought a soue vide and a flame thrower. I have been cooking at 129 degrees and then flame thrower. I over cooked the steak. And the flame thrower really burned the fat I n the try tip. Do you have the frame thrower al the way up?

    After watching your videos, I have three requests for future videos:
    - Please try some other cattle breeds than wagyu and American beef.
    - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ?
    - Please cook a foie gras in a terrine using sous vide.

    I injected a turkey with that same wagyu beef tallow and butter then cooked I it on the smoker came out awesome. I use it all the time for steaks brisket smoked pork ribs

    I've always finished cooking my steaks after grilling them to right below rare and then letting them fry for a few minutes in a pan with butter to rare/medium rare...same concept I suppose, but better because as opposed to milk fat you're using beef fat which is more appropriate.

    On the next episode of sous vide everything with mau mau we’re having a milk steak , 8 cheese Mac and cheese, garlic bread with cheese , and 72oz milkshake. Angel gets everything that with no dairy lol

    Sous Vide and oils/fats still do not work well together (not even when it's Wagyu Beef fat).

    Similar results to sous vide with butter or brine. It seems like when you cook sous vide with any liquid, the liquid pulls the flavor out. Is there a way to go longer to allow the steak time to reabsorb the flavor, but not get too mushy?

      My guess is if you just dont use a lot of liquid and if you provide some way for the steak to absorb the liquid, salt pulls in water but maybe theres something you can put on a steak that pulls in fat instead

    Gonna have to get some of that. Not surprised about the potatoes. The thing that made McDonald's fries so good back in the day is they were cooked in tallow and not oil, like they are now.

      My friend who managed a Mickey D's back in the day (80's) said the fries are so good because they spray them with sugar water before the freezing process. Not sure if they still do it, but I would guess that they do bcause they are still awesome, lol.

    I would like a video where you weigh the salt compared to the meat so we can get an exact formula for salt. I think I've heard 2% salt by weight in a video. Maybe it changes with flaky salt, regular salt, etc. Maybe it varies from a small steak vs a brisket. Salt may be subjective but I would trust your palette over just winging it. Great vid!

    Guga : To keep it simple, I season it with a good amount of salt followed by ground black pepper and garlic powder.
    Also Guga : *Proceeds to dump a mound of salt right on top*

    I use this tallow when i pan sear in my cast iron. It works amazing!
