    Thank you Mouse Toes! I bought a canner exactly like this (all that is available right now) and yesterday I watched this video. I did it! I did it! I canned 30 pints of meat stock that I had frozen in the freezer. So much great information here. I especially appreciated the information about siphoning. When I was doing the fish stock I had, I could smell it when I opened the canner and freaked for a second. I went back and watched your video again, un-freaked and cranked the Gary Puckett back up. You are awesome. Thank you so much. 🙂

    I am now a canning monster--lol! Even thinking about getting a second pressure canner. My garden is spitting out food like crazy, and I am now canning everyday. Getting ready for winter. Woohoo!     Awesome video! Hoping to get my first pressure cooker this spring, try some beans later on. I love how she said she doesn't answer the door or answer the phone when she's busy canning BUT she runs out and feeds the fish. lol Such a character makes this fun to watch!

    Hi mouse you are fantastic! Like an Australian getting it right full practical and sensible. Just about to buy a presto canner and get into it, first of all from hundreds of wild blackberry bushes on my farm in Australia. Have my mums 70 year old Fowlers vacola setup for water bath canning... keeping that treasure and now to be doing high pressure too. Thank you mouse toes, yoiu are a true champ.

    My first time canning and couldn't understand way the needle on the gauge wasn't moving. I turned off the stove prayed. Then looked online to check if I can find instructions via video. I found you and love your instructions. .😍

      Joanna W I am a new canner, too. I have pressure canned a smoked turkey breast broth. It was great!! I stood there and watched my Presto pressure canner that I got off CraigsList. It came from a place about 2,000 feet higher than I am. I have a glass electric stove top, and I can't remember where I heard it but for that glass top it is better to use the Presto. The All American is much heavier when you compare them empty. It is December 2019. Good luck and Good canning!!!

      I wouldn’t recommend using anything but a very small canner on a glass stove. The weight of a full canner can crack a glass top stove. I use a small propane burner (the kind you buy for deep frying a turkey) and a propane tank out on my deck instead.

      The Prestos are your best option because they are a lighter weight, but that is because they are made with a thinner wall and base...Yes they can warp... but in nearly all cases its because the operator used the pressure canner on a propane burner with excessive amounts of flame... or allowed the canner to run out of water
      There are two types of pressure canners with the Prestos.. With a pressure gauge, and "without" a pressure gauge..The canner "without" a pressure gauge will come with an adjustable weight that can be set for 5lb., 10lb., or 15lb. depending on if you use the weighted rings or not..Both are reliable but the "dialed" canner requires you to constantly adjust the heat setting to keep the pressure at the required level or slightly more... But the "gauge-less" model makes you use the next highest weight setting for your product
      One of my best pieces of advise is to go through a couple of practice runs trying to keep the weight dancing at a "gentle rock" instead of a "frantic jiggle" with the "adjustable" weight, or constantly adjust the heat as you are monitoring the dial gauge,... and KEEP notes. The weight is designed for a specific release of "weighted" pressure which is what causes the boiling water to exceed 212 degrees.. You can have too much heat but it will result in quicker release of pressure and accelerated water loss as is shown by the way the weight rocks or jiggles or the dial gauge exceeding the recommended pressure..

      First, whatever pressure canner you decide on, it’ll tell you in the manual if you have a glass top contact stove manufacturer to see if it will be ok to use

    Oh I love your tap near your stove, told my husband I want one at my next home. I am amazed that you only wait 10 minutes after lid lock goes down and you open your PC. I wait 15 minutes and remove the weight, then another 10 minutes before I remove the lid and I always get siphoning.

    Your video was awesome! I've had the same presto canner for years but I always use it to do hot water bath type foods. Normally I do stewed tomatoes with a little lemon juice for acid or I do pickled hot chilis and stuff like that, until today. Today, I pressure canned 8 pints of pinto beans!
    Interesting point, once my "petcock" popped up and I waited nearly 15 min, I never actually saw steam. It was blowing out pretty fast, just not visible. Possibly due to how dry it is here, Southern AZ.
    Also, I have to rely on the gauge more as my recipe called for 10psi but I have to altitude adjust to 12psi. I kept it at least 12 by the gauge but under the point where the weight rocked, so mostly 13-14 by the gauge. I wish I could find a 12# weight.
    Loved your video. Best canning video I've watched.
    Don't burn your toes.

      Way to get your pressure can ON MaddBaggins! My dial guage always hits 11 pounds when I am going for ten. And you are right about not always seeing the steam but you hear it venting too. you rocked it! ^5

      If you hold your hand an inch or two above the vent, you can feel the stream of steam. Don't worry! It's not hot enough to burn you.

    Your sense of humor is golden! Love a down home self depreciating sense of humor. Been thinking about canning, just to learn something new. I don't care much for store bought canned veggies or meat except maybe canned baked beans or tuna fish. So, how does home made canning taste? If you use a basic recipe do they taste as good as fresh? As good or better than frozen veggies? Wasn't raised at all on canned anything except some store bought stuff.

      Thanks sw8741. I much prefer home canned including green beans, carrots and even collard greens from home canning for the taste. I get frozen vegetables and dehydrate them as they are easier to store and simple to add to stews or soups. Frozen veggies are frozen right from the field too! I do NOT like canned corn at all so I freeze it!

    Oh my goodness! Thank you for this video! This made me not fear this... "It ain't hard"... just moved to a homestead in the country and am excited for pressure canning since we're running out of room in our two chest freezers since we locally source, hunt, or catch all of our meat. Best line of the entire video: "Aint nobody got time for botulism and by the way that'da kill ya, doesn't have a smell, nothing, you won't have a clue until you're like laying in your yard waiting on the ambulance!"

    Wavin' at you from West TN. I have both the Presto 16 and 23 quart canners.and really like them. I'm also a new canner and just like dehydrating, I quickly became addicted. Need a pantry, but since I don't have one, I use plastic shelf units in the laundry room, which is small.. My house is 103 years old, has no heat, AC or much closet space, but I make do. Enjoyed your video, thank you for sharing with us.

    THANK YOU, THANK YOU & THANK YOU! I've only had my Presto Canner for 2 MONTHS, then all of a sudden, the Pressure was not RAISING to 10 lbs! i ORDERED ANOTHER RING ........... then I realized ......... AFTER THE FACT .......... the GADGETS had become LOOSE!

I bought my Presto about 7 years ago and lost the manual and just downloaded it an ordered replacement ring, gauge and a weighted wooble thingy like yours. Just figured it would be better to be safe than sorry if any of them go out.

    I have the presto canner as well and I LOVE IT! It gets the job done at a great price. Most people complain about changing the seals but I haven't had any issues. I was even thinking of buying a second presto canner so I can run them both at the same. And the price is right.

    Great Video !!!! The only thing I might add is to keep a journal of successful completions.. For instance we know better than to keep the burner on high in the venting process because we have lowered it minimally and then eventually in greater measurement and nothing bad happened.. We were also able to lower the heat during the process and not lost the boil so it helps us to keep from having overflow by "understanding the process and limitations" and knowing the equipment we were using

    Thank you for the video. I just bought a 16 quart Presto pressure canner and am excited to learn how to use it. I've only done water bath canning for 2 years for pickles and apple butter. I did have one question: after you put your jars into the canner, how much water did you put into it? I missed that part. My manual says to put in 3 quarts.

      Inside your Presto you will see 3 different lines. You can actually feel
      for them if you can't see them at first. You pressure can at the level
      of the lowest one.
      Drag to mark 2.39 and I show with a flashlight where the marks/indentations are. Welcome to pressure canning! If I can ever help please message me.

      Hi Nu! The chicken was put in raw and the processing cooks it completely AND you get righteous chicken broth in the jar. The first time I pressure canned chicken my hands were shaking and it took us two weeks to open a jar and eat it lol. No longer afraid to do it or eat it and as you see I follow mad safe instructions for doing it EVERY time I can any meats.

      Yes once that petcock pops up I start the 10 minute timer for venting.

      I'm at 3200 feet altitude, and the petcock on my 23 quart Presto doesn't rise until after I've vented the canner for the ten minutes and put the weight on. The instructions that come with the canner say to start the ten minutes from when the steady stream of steam commences. They don't mention the petcock in this context at all.

    Just canned Yukon golds. They came out darker than I was hoping even after adding a little lemon juice to keep discoloration at a minimum. Did I miss anything else? Love your style and channel!

      I have been told it is starch content and had once taters that actually had a SLIGHT pinkish tint to them. it is weird but did not affect the taste. I always do better when I put them in water first and that is where I put a little lemon juice.

      Presto 09905 Pressure Cooker Sealing Ring is the title. There are two different ones and will be easy to tell which one fits your canner. The box reads Pressure canner sealing ring.

    I saw a review/update on Orchard Road lids where the white lining had bubbled and separated from the lid after two years of storage. Have you had any issues with the lids?

      I just checked a tomato sauce from 2015 with Orchard Road lid and looked at a new Ball and a new Orchard Road and they have the same white underside.

    I just got my first pressure canner and its a presto 23 qt. I just canned my first batch of black beans and when it was done there was a little bit of black beans in the canner. So i naturally assumed some wouldn't have sealed but this morning once everything was cooled i realized they were all sealed! So are they no good? Ive never seen anyone address this in a video ! I know yall are probably insanely busy, but if you can't find the time i sure could use the advice! Thanks so much for your help! God bless!

      OH I know that feeling BUT you CAN DO IT! Read that manual, follow the instructions on it for the amount of water in the bottom. Make notes, X inches water, rack on bottom, jars put in, Vent X amount of minutes (your canner instructions) etc!

      @@MouseToes I actually got the Presto 23qt one. And I ordered me the Excalibur dehydrator yesterday. I’ve never used a canner or a dehydrator. These days have certainly been filled with me saying/thinking, I wish I had learned/listened to my mom when I had the chance. But I think tht today I’m actually gonna try to can something. It’s just each time I think of going and just doing it, I get sick to my stomach. Just nerves I guess. I know I’m crazy but oh boy. LOL

    When you said if you have a few extra you put them in the next batch and add a couple of jars of water is that has something to do with equalizing the weight inside and when you’re saying jars of water that’s without lids right? I got my first canner. And it’s just me and my husband so I was thinking about like small batches of chili when I have leftovers I’m just wondering why you said a couple of water

      to fill my canner I use some jars with water to 1" headspace, I put a used lid on and I do put a band finger tight. I have the small Presto canner and it holds 8 pints so if I have 3 pints with beans for example I will add 3 jars of water in. It helps the jars to NOT jump around and maybe fall over.
