    The Chef Sukhdev looks like a really nice guy - I hope things are going well for him during COVID crisis.
    Chinese Salt is monosodium glutamate ( is potentially harmful ) - No wonder street Szechuan Sauce tastes better than home made or branded ones.

    Mohsin, you are extremely lucky man. Sukhdevji, aap red chili paste use karenge toh it a color nahin dalna padega. Half kashmiri & half spicy sukhi laal mirch garam paani me in soak karke grinder mein paste banake rakho. Since red chilles will be wet, u may not need to add too much water when making the paste.
