it s used to transfer some information from the patient to the articulator -used to simulate mandibular movements. When we make teeth we need to integrate them with everything with other teeth with the base of the cranium etc.So it gives us information about how to put the mandible and maxilla together like it s in your mouth but this time in the articulator where we can work .Hope it s useful.

i don't understand how this determines the correct jaw position, given that its setup relative to someone's ears and nose

it is not recording the jaw position. it's recording the position of the maxillary arch relative to the hinge axis of the jaw. the hinge axis of the jaw is immediately in contact with the anterior ear canal, so the ear pieces approximate the jaw axis. For 99% of cases that will be enough. for the few cases where there is a jaw dysfunction or pain and the maxilla needs to be mounted exactly in relation to the hinge axis of the jaw, there are other methods that can do this with a fully adjustable articulator.

Which plane are you using for guide ? Camper or frankfort ? Using acusticus meatus externus and glabella (nasion point) are enough for ideal jaw position record ?
