I used my steamer to cook the sweet potatoes for an hour, so that I didn’t have to watch them over the stove, and used a hand mixer to mix since it’s all I had. Very easy to make and delicious! Thank you for sharing.
Used my pressure cooker for 20 mins to cook them faster. Also, cut the sugar down to 1/2 cup as I think a whole cup of sugar in the potatoes is too sweet.
I make this the exact same way except I add a pinch of cinnamon, nutmeg, and ginger to my mixture and a splash of heavy cream. Makes the sweet potatoes extra fluffy.

Keep a close eye on them as you don't want them to burn. If you use pecan pieces, cut the cooking times way down, like in half. The smaller the pieces, the more likely they will burn. You just want them to have a nice simple toast to them. If you just want toasted pecans that you aren't putting in sweet potatoes, add cinnamon or salt or maple syrup and brown sugar - these are wonderful holiday tasty treats!

I have found that I have to strain my sweet potatoes before using them to get all the fiber strings out of them. Use the exact same recipe and it comes out great.
I hate when there’s a bunch of fiber strings in the casserole… can you elaborate on how you strain them? Do you mean after you boil them you strain the water out?
@@simplyayla I beat my sweet potatoes with an electric mixer. The fiber strings will wrap around the beaters. You can turn the mixer off and pull the fiber strands off the beaters and repeat as many times as needed. After preparing my sweet potatoes this way, I can continue on with my recipe.
Also about 1/2 to a whole can of carnation will get the strings out. And make sure pie and casserole filling smoother and lighter! Take a little to the side and try the lemon and nutmeg, you won't be disappointed

I make this every year. I bake my sweet potatoes.. I place the raw potatoes in the dish I intend to use for the finished casserole. I make sure the dish is filled with potatoes and bake them. I also add cinnamon to the mashed sweet potatoes, eggs(3 for the size casserole I make), cinnamon, sugar. I always double the topping to make a large casserole. There are never left overs.
Anytime you use the real thing it’s so much better. Just from my experience making yams/sweet potatoes every year, that’s one thing I never take the short cut on. however If you are somewhere that doesn’t have fresh available, I could understand the use of canned.

Wonderfully delicious recipe, thanks you. Just so you know that microwaving food kills the nutritional value. (You can research it yourself). Also, I find boiling the sweet potatoes creates too much water in the recipe, and they will not be as thick and creamy.
No nuts please, and while you’re at it…no sugar or marshmallows. Try 1/4 tsp. Per four sweet potatoes. Baked 1 hr. at 425, cool and peel. Add 2 tbs. butter and 1/2 cup milk. Add 1/4 tsp. Cayenne pepper and blend well. Scoop potatoes into a small greased casserole dish, and heat uncovered for 15 minutes. Sprinkle nutmeg over top and serve. 😅 Merry Christmas and happy eating.🎄

If you beat them with an electric mixer, the fibers will hang on to the beaters. Rinse the beaters and repeat. It works very well.

Really the only way to make it just like Ruth’s is to bake it in the individual ramekins. Ruth’s has a dry consistency that’s very hard to replicate.
