Homemade Chili sauce
Recipe from a recipe box
1 cup tomato sauce
¼ cups brown sugar
2 TBSP vinegar
¼ tsp cinnamon
Dash ground cloves
Dash all spice
Mix everything together.
Tartar Sauce
Recipe from a recipe box
1 cup mayonnaise
1 TBSP dill relish
1 TBSP minced onion
1TBSP lemon juice
Salt and pepper to taste
Dash of paprika
In a bowl mix Mayo, relish, and onion. Stir in lemon juice salt and pepper, paprika
Cover and refrigerate for 1 hour before serving.
Baked Green Beans
Recipe from Sunset Book Cooking with Casseroles 1958
2 Slices of Bacon
2 cans green beans
¼ cup onions, chopped
1 tsp salt
½ tsp dry mustard
1 tsp brown sugar
½ cup chili sauce
In a skillet: Cut bacon into small strips and brown. Measure 2 TSBP bacon drippings and add with the bacon to the green beans, onion, salt, mustard, brown sugar, and chili sauce. Turn into a greased casserole dish bake covered in a 350-degree oven for 20 minutes or until heated through. Makes 6 to 8 servings.
Grilled Salmon steaks with fresh Dill and thyme

4 Salmon steaks
3 TBSP chopped fresh dill or 1 TBSP dried dill
3 TBSP chopped fresh thyme or 1 TBSP dried thyme
1 TBSP grated lemon zest
Plus 1 lemon cut into wedges
4 TBSP unsalted butter
¼ tsp salt
¼ tsp black pepper
Sprinkle both sides of the salmon steaks with the dill and thyme and lemon zest
Prepare grill. Cut out four 12-inch squares of heavy-duty foil
Place 1 salmon steak on each piece of foil and top with 1 TBSP butter. Bring the edges of the foil tighter and crimp well to keep the juice in the packets.
Place the packets on the grill and cook for 5 minutes. Carefully turn and cook for 5 minutes on the second side.
Open packets, season with salt and pepper and serve with lemon wedges.
**Kitchen notes on the page. You can bake the packets in a 425-degree oven. Place on a baking sheet, no need to turn them. Baking time is 10-12 minutes. **
