To add more specifically because tanjiro learned sun breathing and all other breathing styles are derived from it he has technically did the training for every style so he could learn moon breathing because it was invented by MIchikatsu when he was a demon slayer

While the old man may have saved tanjiro it’s also possible we would have gotten demon tanjiro from the start I hate that people think tanjiro would go insane like he did in the end he gained an immense amount of blood from muzan and still was sane enough that he didn’t kill nezuko a small amount of blood probably wouldn’t affect him the same and it’s about 50/50 that he would be immune to the sun right off the bat I mean he became immune almost immediately when he became demon king tanjiro

Any one can learn any breathing style. It's actually common for slayers to learn multiple before finding the one that suits them the best.

Because breathing Styles are not seen they are visual so basically they can’t see the flame or water effects. (The creator of demon slayer said so)
