A friend on our server made an absolutely MASSIVE villager hall, with first-floor bedrooms and second-floor workstations. I swear there were at least 15 of every workstation in that place, with spiral staircases and nice wide walkways. It was fun to hear all the villagers wake up and run upstairs to their stations in the morning XD
i made something similar, except I made a multi-floor hotel/apartment complex with all the beds and then had all the work stations in a common room on the first floor. It took so much effort to put in enough railings that the villagers wouldn't fall down the stairs every morning while still making sure they didn't get stuck!

Villagers aren't slaves they are just some people that got stuck in a box that we mistakingly found. We are just trading with them to give them some fun. We occasionally try to free them but mysteriously every single time they get on a minecart and get killed by a zombie. We always save them tho. What good people we are!
All my villagers are 100% free range, wild caught, home cured vendors. No moral grey area there. I provide them the humanity they once lost, and they provide me *unlimited power* 😈
Yeah, my villagers are free roaming too. And I don't try to lower their prices with curing their zombification. I mean, I might need to cure them once, if I found them as a zombie villager...
Don't forget about the Iron Farms. Those operate on the fear of the Villagers. Simply have them next to a zombie, and they spawn in an iron golem. The golem dies, and the cycle continues.
Someone needs to make this a show where the player is the antagonist and the villagers have to escape but at the last episode it leaves off a cliffhanger where they build another village and give players unreasonable prices, making them the antagonists.
This is why I can never make “trading halls” in game. Like I build a wall around the village to keep them safer and keep raiders out, but I always let them free roam

As far as finding them- Villagers follow a pattern. It shouldn't be hard to either find the one you need either near their work station, their bed, or the village center/gathering site (bell).
And, it just... looks better. I mean- a box full of one by one holes where a villager is stored, or a nice, sprawling village, full of houses for villagers to live, and places for them to work, and mingle. Making a village is a great excuse to just... build, and have fun.
