Man, you grilled that fish to perfection. Had one of these with my wife and parents at a restaurant 6 years ago. Grilled whole with head and diamond score. I've still not forgotten the rich flavor of this fish. Going on vacation this July to surf fish with my 3 wonderful additions to the wife and I. Hoping to catch at least 2 of these. It'll definitely make the trip worth it to eat some 'free' fish. I've been studying how to fish, and I'm bad at it. Hopefully some prayers and added blessings will make this happen.

I always score whole fish like that when I cook them, grilled or fired. The seasoning gets down in the meat better, and it seems to help it cook more thoroughly.

It's cold up here in CT, I got up to 26 deg F this morning, Been cold most of the week. With that, the trout fishing has been very slow. The water is still quite cold. Forcast is a warm-up this week. I bought a new fly rod, an 8'6" Scott Flex 5 wt line. I plan on fishing a lot since I retired.

I used o use webers , lved used them I see you putting lid down , not sure if the hewer oonbe do but if you look unfrt the lid there is a hook that you can use . The hook is for hooking the lid to the side of weber pit ,to make it easy for you . Look under lid if its not there the most have done away with cause I see yours has a temuter gage on it thats a good idea on new ones . I have and old one sitting under my patio and have used it in 29 tears but they are worth ever penny you pay for them. I am going to try your reciepe but I use PitBoss pit

Pompano are a delicious fish. Remember surf fishing when I lived in Florida, what a treat and fun to catch too.
