The Best AeroPress Recipe of 2021 🏆

  • In this video, Tomo will teach you how to make AeroPress coffee like the 2021 World AeroPress Champion, Tuomas Merikanto (@drinkswiththomas ) 🇫🇮🏆
    Recipe:
    1️⃣ Add coffee: Add 18.0g coffee in the inverted AeroPress
    2️⃣ Pour water: Start the timer when water hits the coffee. 0.00-0.10 add 50g water @80°C (176°F).
    3️⃣ Stir: 0.10-0.15 stir very gently 3 times back and forth.
    4️⃣ Pour water: At 0.15-0.30 pour water from 50g to 200g @ 80°C (176°F).
    5️⃣ Stir 0.30-0.50 allow to brew, at 0.50 stir very gently 3 more times.
    6️⃣ Allow to brew: At 1.00 push excess air out, attach the filter cap and let it brew till 1.40.
    7️⃣ Flip brewer: At 1.35 put the pitcher on, at 1.40 flip the brewer so coffee doesn’t spill.
    8️⃣ Press: When flipped, press right away at 1.40-2.00.
    9️⃣ Swirl to cool: Swirl at 2.00-2.30 and in the end pour from altitude to another pitcher.
    🔟 Serve: Enjoy!
    💦Water:
    We used Third Wave Water- Formula 2: 100% espresso.
    Grind setting:
    - medium-coarse 👉 27 clicks on our Comandante C40 MK4

    Definitely gona recommend capping first before expelling the air. Learnt this the hard way

    It's much safer to push the air out with cap and filter attached. I've had the whole brew spray across my kitchen when pushing the air out without the cap and filter on. Not fun.

      My favourite is to screw on the cap but forget the filter, and I am met with many tiny jets of hot coffee that go everywhere.

    This worked really well with the unusual Ugandan coffee I have at the moment. It’s a light roast and it’s very floral, this technique managed to extract the majority of the flavours without tasting acidic (as I found with other methods). Thank you!

      Did you raise the temp for your light roast or did you keep it at 80?

      @@natecorsn9097 I’m pretty sure I used water close to boiling, the most important thing I found was to not leave the ground beans saturated in water for too long - the floral notes were lost with too long of a brew time > 1 minute

    You get better result and without wasting so much coffee, with a finer ground:
    - 15 clicks on a Commandante
    - 11g of coffee
    - 200 ml of water
    - Important: Water 88-90C for regular Espresso roast (light to medium on speciality coffee)
    You don't have to do the inverted method.

    In a pinch you can make coffee using the kurig little basket adapter thing by itself with a mug, microwave like a half inch of water then put coffee in the little basket adapter, then set that in the half inch and drag it in a figure 8 till it all leaches out, add water heat again

    Thanks for the recipe, having trouble finding the grind size on my new Barraza Encore ESP, is there a way find a transformation between clicks on commandant vs Barraza ESP setting?

      don't worry so much about it. Eyeball what a 'medium coarse grind' is. Then make a second cup 5 clicks in whatever direction you want and see which you like better. The only point to any of these recipes is to give you a starting point for YOUR taste.

    Why was a coarse/medium grind used?

      Because he was probably using a dark roast coffe (my best guess) aeropress sits real nicely within the medium grind ballpark for dark roasts because you don’t want to over extract it. As a light roast you actually want your water hotter and grind finer

      Which is also why he’s probably using 80°C, and not 93. Ballpark the extraction water temperature with the larger grind so everything balances out.

    I dont know what the benefit is for the pre-infusion vs filling all the way.. I mean it's all mixed in the end, why not pour all water in and stir?

      Do I have to pour the extra 150ml as soon as stirr the first time? Should I pour fast?
