Is Sapphire Bot role above all of your roles or atleast above the roles that you're trying to assign via reaction roles? If you're still facing the issue, you can join the community server and I'll be there to help you out.
When you are creating the reaction roles there are two options to choose "Options" and "Edit Message" - Choose options and change the limit 1 "Maximum reactions per user"
I'm planning to make a video on all the essential bots for the server, but for that first I'll need to make the tutorial on each one of them - so it'll take time. And regarding moderation video, you can expect it by the end of next month.
