Explanation why Saitama beat Lord Beerus:
In Anime War Episode 1 to 3, Beerus was dominating the fight, but as it progressed the fight start to become even and eventually Coycutus took the lead. Saitama ultimately stepping in to save him. Dark Siphoning works best in prolonged fights as it drains a percentage of the users physical stamina during melee attacks. However, it can also be used to absorb energy attacks for melee attacks. Dark Siphoning drains faster than it gains if you siphoned half of Beerus's power throught combat your permanent state increase would not to be equal to half of Beerus's power. It's more like 25% of what you've drained throught melee attacks. So if Beerus's power level was 1.5 Septillion, and you siphoned half. Your permanent power level increase would be 10 trillion. Essentially, it drains a lot of energy, but converting that into increased power is not an even trade. This is why Saitama was able to defeat Coycutus even after he'd siphoned Beerus's ki. It's not to say that Saitama is stronger than Beerus. It's just that Beerus had been drained so much during the fight that it was unfair for him.
