A couple of quick tips: I will use an immersion blender next time, OR allow more time for the cheese to mix well with the stock. It will be a smooth liquid when it's mixed well. Also, a 2 lb box of noodles gave me 13 pints worth. The #10 can of cheese, mixed with the broth was enough for 15 pints, with maybe 1 cup left over, which I'll use as a topping for baked potatoes, Spanish omelets, steamed asparagus, etc.

Have you ever added something like ground sausage or bacon pieces to this? This would be a great meal to pack in my lunchbox. How long do you think I should can it?
If you add meat, the processing times would be 75 minutes/pints. I think the pasta would get too mushy. An alternative might be to can meat separately, and add it to the pasta when it's ready to be eaten. I hope this helps answer your question, Stephanie. 😀
Not sure if this would be the case with this type cheese but I can tell you from experience reg cheese such as veleta type ( I know not suppose to be real cheese) but in those packs of cheese sauce in about 6 months it turns brown and no good. Not sure if the same thing happens when canning it.
