I heard a pastor say that a missionary should always consider the country they were sent to their home country. Don’t look back at where you are from, embrace where God sent you. I am glad you have embraced the Philippines. On another note I’m vegan and I enjoy tofu or how ever it’s said in Tagalog! I’ll try this recipe.
Pechay is probably “Bok-Shoi” here in the USA, an Asian vegetable, it’s very good. That dish looks yummy. It’s also easy to make & healthy. Thank you for sharing.
"eat the food of the land" I do agree, I have wondered why do some from the U.S.A. go to a foreign land looking for a McDonalds, KFC, etc., when they've been eating that back home. I understand finding a little taste of home, but adventure is fun. If I make it to Kenya or the Philippines I just want those specialties. I do like tofu from time to time. Looks delicious Liz as always.

that pechay alone here in texas is about $5-$6... tired buying and not started planting them as we did when i was a kid... tofu starts at $2 per lbs
