anyone know what type of flour they use?
It's not a high gluten flour. They said in another video they refuse to use All Trump by General Mills. So I'd guess it's a bread flour for two other reasons:
1) It's not a *crunchy*, dry crust with a dense, heavy chew.
2) They were a bakery probably decades before they were a pizzeria. So it makes sense they'd just continue using bread flour.
Best pizza around. Anchovie is also great, along with the sausage.
How do you make your Calzone with just mozzarella cheese? My grandfather use to make DeLucia’s Italian bread. I worked there on Weekends in the 1950’s. How do you make plain Calzone without Ricotta Cheese. Thank you

Its just some highschool chic that works there. How hard could it be? They make a set number of pizzas...lol. call that a pizza joint.
