I love fresh water cats don’t get them to big or the meat is kinda mushy sometimes but I love frying them up in nugget size and having a good dipping sauce. Where I live in Texas they have always been real clean.

I have not ate the hard head cats. But have ate a pile of sail cats. I have always cut their tails off to bleed them out. But you are right. Very good to eat
