If you're living off the land in the wild and you hunt for your family and only what you need like the indigenous cultures then yes. In a modern society not necessarily I'm a pescatarian because even though I love all animals vegetarian food can be hard to come by but other than that, I've gone without red meat and poultry for over a decade and have not experienced any problems.
The flavor and texture can depend on the region of the world. The diet (spices, seafood, vegetarian) and activity level. Obese=veal like, thin/muscular = stringy for soup. There ya go folks.
