All my knowledge of these chords initially cam from learning songs by Amy, CBR, Stevie Wonder... From there I began to break down the harmony using scale theory and started working out the common voicings for 4 & 5 note chords. I still have a desire to take it further but learning standards just isn't practical for my. Unfortunately I can't recommend what standards to learn as I have no experience other than learning songs. If you're into music from the 80's however, you'll find that most of them use these 'extended chords'. Funk, Blues & Gospel will also take you down that route.
