Nusa dua is a gated area so anywhere outside of the entry gates you will essentially get a far better conversion rate. You'll also have one within your hotel but the rate will be worse. Recommend asking your driver to stop at one on the way. As for a nanny, I honestly am not sure but I think a solid search through google with some reviews will leave you with someone you can trust. I saw them with so many different families so I can only assume they are not too hard to find. All the best with your trip!

I had absolutely no concern about any fresh food. I can't confirm about whether the filtered water law applied to washing food too but I could only assume so. My whole family ate without concern and I would be extremely shocked to see a 5 star hotel with such a great reputation make a decision to put their visitors atr isk of bali belly by not taking the necessary precautions. So that's my guess but it might be better to ask anyways for peace of mind
