Hi thanks for mentioning me in your video. The Bhutanese dish you prepared is called kewa datshi, meaning potatoe cheese. We usually put only potatoe, chilly n cheese, rest of the ingredients are optional. The cheese we usually use is our local cheese which has to be a bit fermented to taste better. But nowadays all types of versions are there as in with fresh cheese, amul cheese etc. I personally like it prepared with a bit of our local fermented cheese n amul cheese (Indian) mixed together. The way you prepared looked delicious. The consistency of the gravy is as per your preference. You can make it dry or with more gravy. In our western region people make it more dry n in our eastern region people make it more soupy. The Bhutanese chilly you used is mildly hot so we usually use quite a lot of chillies in one dish but in your case you used one chilly as per your husband's tolerence level which is also fine. You can even omit the chilly altogether n add little bit of chilly powder if you want but not the Indian chilly powder, it should be the Bhutanese one or else the flavour won't be right.
