WATERCRESS SOUP | My quick and easy recipe to a family favourite Chinese soup

- Also known as "sai yeung choy tong" in Cantonese, the watercress soup is another childhood favourite in my family. Here's my simple recipe using very few ingredients to cook this heartwarming soup that is delicious all year round. I'm currently enjoying this in the thick of Winter and during Sydney's COVID lockdown.
The flavours of this soup intensifies overnight and can be used as a base to add noodles in (I recommended rice vermicelli) to create another wholesome meal.
The pork can be substituted with beef ribs or chicken with bones.

Ingredients (serves 6):
1 bunch watercress
2 carrots
Few slices of ginger
Handful of fried anchovies
0.5 teaspoon chicken/ vegetable stock powder
350gm pork neck bones
2.5l or 10 cups of water
Pepper and salt to taste
