How do you capture a still (from program or preview, either way). Thx in advance! Great vid, easy to follow.

Use the Capture Image menu, found in the main menu. There are 3 settings: Select a source, select a still slot to save to, and start the capture.

You can use the AUX video output to send a dedicated feed, walk-through available at 2:25 in the video.
There are multiple ways to manage audio sources, try Audio Follows Video and see if that helps, walk-through available at 10:44 in the video. You can also use the menu controls to access these settings.
This guide covers audio routing in detail: rolandus.zendesk.com/hc/en-us/articles/360049217892-V-60HD-How-to-Set-Up-Audio

Is it possible to get the menu display on the multiview display?

Yes, it is enabled by default.
If you want to change the position or hide it, use this setting:
Menu > 17: System > On Screen Menu
