Mine are unfortunately plastic and the struts are bent, so it rubs and i can't bend it back

How to remove them ?

How would I fix the back brakes being in contact with the fender? It’s making my eye twitch and I don’t think it’s good for the brakes…

Usually you can just slight adjust the fenders by hand to prevent them from hitting the brakes. If not you'll need to straighten the brakes to ensure they are exactly in the center.
